    It’s Margarita time!!!

    Today’s beverage is a little bit like two in one: Pina Colada meets Margarita. Both are exceptionally good, and always make me think of a tropical vacation.

    I couldn’t decide between them, so I combined the flavors and made a Coconut Pineapple Margarita. Some might call it a Pina Rita. 😀

    Why You Will Love this Recipe

    Do you like Pina Coladas? Margaritas? If both answers are yes, you will LOVE this drink. It combines the best of these to make a truly delightful cocktail. It mixes up in minutes and gives a sweet and smooth taste sensation in every sip.

    The coconut flavor dominates but is balanced with pineapple and lime to keep all the taste buds happy. The beverage is light and refreshing, yet completely satisfying.

    It’s a perfect drink to enjoy on a warm summer day – or any day you want to feel like you are in the tropics!

    And actually, it has slightly less liquor than a traditional margarita, since only tequila is used and no triple sec. So you can totally justify having another if you’d like. 😀

    Ingredients Needed

    ingredients: tequila, pineapple juice, cream of coconut and lime juice

    Tequila note: I used 1800 Coconut tequila for this drink. I wanted the maximum coconut flavor, and the tequila helped deliver!

    However, if you don't want to buy a special flavor-infused tequila, I do understand. Once I had the recipe figured out, I made a coconut pineapple margarita again using a regular silver tequila. That was also an excellent drink.

    So if you would rather use the tequila you already have, go for it. I've done lots of taste testing (you're welcome!!) and feel confident that you'll love this cocktail either way.

    🍹How to make a Coconut Pineapple Margarita

    Cocktails are easy, and this one is no exception. Just add all the ingredients to a cocktail shaker with ice and shake vigorously.

    Strain into your favorite ice-filled glass (or rim it first with toasted coconut if you’d like) and garnish as desired before serving.

    Recipe FAQs

    What glass should I use?

    Any glass works – martini, margarita, rocks… It really doesn’t matter as long as you have enough room for ice plus the beverage. The glasses I used are 12 ounce whiskey glasses.

    What kind of sweetener does this recipe use?

    A typical Margarita uses simple syrup, but that is not necessary in this recipe. The pineapple juice and cream of coconut both add a natural sweetness that you may consider to be “the sugar” for the drink, and the lime juice also adds some additional tartness and flavor.

    I don’t like tequila. Can I substitute something else?

    Other liquors could be substituted for the tequila in this recipe – but of course then it wouldn't be a margarita! Try a citrusy vodka or perhaps use some gin. Alternately, you could use a combination of juices and flavorings to create a similar taste without actually using liquor. And of course, you can stick with rum and just make it a Pina Colada.

    Why should I garnish my glass with toasted coconut before serving it?

    Garnishing the drink is a fun way to add some flare and make your cocktail or mocktail more appealing. Toasted coconut looks cool, tastes great, adds texture and also provides a bit of extra sweetness without adding any real sugar.

    Can I use coconut milk instead of cream of coconut?

    Yes you can. Just substitute the cream of coconut for coconut milk. However, I find that coconut milk doesn't always incorporate as well, and will tend to form little clumps in your drink. The taste is good, but the appearance is less desirable to me. A blender would probably help with this, but I wanted to keep this simpler than that by sticking with a cocktail shaker.

    Ingredients

    • 2 ounces tequila 1800 Coconut or silver
    • 2 ounces pineapple juice
    • 2 ounces cream of coconut
    • ¾ ounce lime juice fresh squeezed

    Instructions

    • Add all ingredients to a cocktail shaker with ice.
      2 ounces tequila, 2 ounces pineapple juice, 2 ounces cream of coconut, ¾ ounce lime juice
    • Shake vigorously for 30-60 seconds.
    • Strain into ice-filled glass of choice.

    Notes

    To garnish, wet rim of glass and dip in toasted coconut before filling with ice and drink. You can also garnish with slices of lime and/or pineapple for extra fun 🙂
    To make it by the pitcher:
    • 2¼ cups tequila
    • 2¼ cups cream of coconut
    • 2¼ cups pineapple juice
    • 7 ounces lime juice
    Stir very well to mix, then pour into ice filled glasses to serve.

      Has anyone made a pitcher of this? I would love to have measurements to make a container of it to bring to a cookout ! 😳

        Someone (in 2022) asked if I could scale it up to make 6 glasses, so here is how that calculated out:
        Multiply by 6 to get 12 ounces. That is the same as 1 and 1/2 cups each of tequila, pineapple juice and cream of coconut.
        The lime juice calculates to 4.5 ounces. 4 ounces is 1/2 a cup. So I would try adding that amount and then adjusting with another squeeze of lime juice as needed.

        I guess I'll need to make up a pitcher myself to try it out!
