Why I Love this Casserole
Taco Tuesday. It’s a thing! And everybody loves it!
But sometimes that one night a week is not enough. If you want all the taco taste in a different form, this Dorito casserole is the answer!
The creamy filling is protein-rich, with ground beef and black beans. Corn gives a little sweetness. And it’s all enveloped in a creamy sauce of soup, sour cream, and salsa.
The star ingredient, of course: Nacho Cheese Doritos. Oh my, what a delicious addition this makes! Crunchy and tasty, the Doritos are the perfect ingredient to give this casserole more texture and of course that distinct “nacho cheese” taste.

How to make this Mexican Casserole with Doritos
To prep, lightly spray a 9x13 pan with cooking spray. Preheat the oven to 350F. And lightly crush the bag of Doritos – you can do this right in the bag. No need to use a rolling pin or anything like that. We don’t want the chips to be tiny, like dust. Just a little smaller than a regular tortilla chip, so they’ll fit well on the end of your fork!
Now, brown the ground beef in a skillet and remove any excess grease. Add the taco seasoning and water, just like you do when you make taco meat.
Turn off the heat and add the corn, black beans, salsa, soup, and sour cream to the skillet. Mix this all together.

Now, layer the casserole in the baking pan. Start with about half the crushed chips. Next, you’ll make a meat and cheese layer by placing half the meat, half the shredded cheese, then the rest of the meat.
Finally, top the casserole with the rest of the chips and the rest of the shredded cheese.
Cover the dish with foil (lightly spray the inner “side” to prevent sticking) and then bake, covered, for 30 minutes. After 30 minutes, remove the foil and bake an additional 5 to 10 minutes, until the chips and cheese are slightly brown and the casserole is bubbly hot.
Your Dorito Casserole is ready to serve!
Expert Tips
This recipe makes a LOT of food, which is a great way to feed a crowd. Don’t have a crowd? Leftovers are delicious! However, the Doritos do lose their crunch, which is at least half their appeal.
In these cases, I recommend omitting the bottom layer of Doritos, and reserving those chips to add when serving. You could also omit the top layer of chips, but I find the melted cheese-Dorito combo too hard to resist, so I usually still make the topping as written. Your choice, of course.

Dorito Casserole with Ground Beef
Ingredients
- 15 oz Nacho Cheese Doritos
- 1 pound ground beef
- 1 packet taco seasoning about 3 tablespoons
- ⅓ cup water
- 15 ounces canned black beans rinsed and drained
- 1 cup frozen corn thawed
- 1 cup salsa
- 1 can cream of chicken soup 10.75 oz condensed
- 1 cup sour cream 8 ounces
- 2 cups shredded cheese 4-cheese Mexican or other blend
Instructions
- Preheat oven to 350F. Prep a 9x13 pan by spraying lightly with cooking spray. Lightly crush the bag of Doritos to break up the chips.15 oz Nacho Cheese Doritos
- In a large skillet on medium to medium-low heat, cook the ground beef until completely browned. Remove excess grease as needed by absorbing it with a paper towel held with tongs.1 pound ground beef
- Add the taco seasoning and water. Stir and cook for 2 to 3 minutes to fully distribute the seasoning, then turn off the heat.1 packet taco seasoning, ⅓ cup water
- Add black beans, corn, salsa, condensed soup and sour cream to the skillet and mix well.15 ounces canned black beans, 1 cup frozen corn, 1 cup salsa, 1 can cream of chicken soup, 1 cup sour cream
- Layer the ingredients in the prepared 9x13 pan in this order: half the Doritos, then half the meat mixture and half the cheese. Then add the rest of the meat, then the rest of the Doritos and top with the remaining cheese.2 cups shredded cheese
- Cover the dish with a piece of foil (spray lightly first with cooking spray to prevent sticking).
- Bake the casserole for 30 minutes, covered. Remove the foil and bake an additional 5 to 10 minutes, or until the chips are beginning to brown around the edges.
