We all know avocado is scrumptious (avocado toast anyone?), but when added to Pico de Gallo ... mmm ... the dip takes on a dreamy creamy-ness! Divine!

How to make Pico de Gallo with Avocado Dip
Assembly is simple: Remove the seeds and inner flesh from the tomatoes and jalapeno pepper (Unless you want the dip to be very hot!).
Chop the tomatoes, pepper, onion and cilantro. Spice this with lime juice, salt, some cumin and garlic powder.
Give this a mix – you just made Pico de Gallo!
Tip: If preparing a few hours ahead of time, put the Pico in the fridge. Then, close to serving time, dice the avocado and stir it into the dip.
Beside providing taste, the avocado and lime juice do double duty. The lime juice helps prevent browning of the avocado, and the avocado will break down (just a little), providing a creaminess to the normally watery Pico de Gallo.
Serving Suggestions
This is the fun part! Of course this is a fantastic dip for tortilla chips. But its also great with tacos or burritos to provide a burst of freshness. I absolutely love it on a taco salad!
If it's summer grilling season, add a little Pico de Gallo with Avocado to your grilled chicken for a touch of light, zesty flavor. And its great for game day or any time you want an assortment of easy dips to serve buffet-style.
Substitutions and Variations
The beauty of this recipe is that the base, the Pico de Gallo, customizes so easily, giving you free rein to substitute. No cilantro? Skip it! No white onion? Use yellow or red! Forgot to buy jalapeno peppers? There’s probably a can of chilis or jalapenos buried somewhere in your pantry.
If you want more spice, you can increase the jalapeno peppers. And remember: the seeds add the fire!
Storage
Any time you add avocado, you have to be aware of the possibility of browning. In this dip, the lime juice does slow that down, but I still recommend that you refrigerate the pico dip as soon as its made and then wait to add the avocado just before serving.
If you happen to have leftovers that must be saved, press a piece of plastic wrap directly onto the surface of the dip before placing it in the fridge. The plastic will block air flow from oxidizing the avocado and turning it that yucky brown color.

Ingredients
- 3 Roma tomatoes
- 1 small white onion diced
- ½ cup loose cilantro leaves minced
- 1 small jalapeno minced
- 1 TB lime juice
- Salt to taste
- ⅛ teaspoon cumin

- 1 avocado
Instructions
