Brussels Sprouts Salad with Cranberries

- 16 ounces Brussels sprouts trimmed and shredded(shaved)
- 1 carrot shredded
- 6 ounces Craisins sweetened dried cranberries
- 1 green onion thinly sliced
Dressing
- ¼ cup apple cider vinegar
- ½ cup grapeseed oil
- ⅓ cup orange juice fresh squeezed (from one navel orange)
- 1 tablespoon honey
- ¼ teaspoon dried tarragon
- ½ teaspoon salt
- ¼ teaspoon black pepper
In a small bowl, add all dressing ingredients and whisk together until fully mixed.
¼ cup apple cider vinegar, ½ cup grapeseed oil, ⅓ cup orange juice, 1 tablespoon honey, ¼ teaspoon dried tarragon, ½ teaspoon salt, ¼ teaspoon black pepper
To a large bowl add the Brussels sprouts, carrot, Craisins, and green onion. Pour the dressing over it all and toss to evenly coat.

Cover and refrigerate at least an hour to allow the flavors to develop.
