Brussels Sprouts Salad with Cranberries

This salad is a delicious new way to serve Brussels sprouts!

Ingredients

  • 16 ounces Brussels sprouts trimmed and shredded(shaved)
  • 1 carrot shredded
  • 6 ounces Craisins sweetened dried cranberries
  • 1 green onion thinly sliced

Dressing

  • ¼ cup apple cider vinegar
  • ½ cup grapeseed oil
  • cup orange juice fresh squeezed (from one navel orange)
  • 1 tablespoon honey
  • ¼ teaspoon dried tarragon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • In a small bowl, add all dressing ingredients and whisk together until fully mixed.
    ¼ cup apple cider vinegar, ½ cup grapeseed oil, ⅓ cup orange juice, 1 tablespoon honey, ¼ teaspoon dried tarragon, ½ teaspoon salt, ¼ teaspoon black pepper
  • To a large bowl add the Brussels sprouts, carrot, Craisins, and green onion. Pour the dressing over it all and toss to evenly coat.

  • Cover and refrigerate at least an hour to allow the flavors to develop.
