- ½ cup butter room temperature (1 stick)
- ½ cup sugar granulated
- ½ cup brown sugar
- 1 egg room temperature
- 1 teaspoon vanilla
- 1 cup flour all-purpose
- 1 cup oats old fashioned or quick cooking
- 1 cup Rice Krispies cereal
- ½ teaspoon baking soda
- 1 cup semi-sweet chocolate chips mini
Preheat oven to 350F and line baking sheet(s) with parchment paper.
Cream together the butter and sugars, using a hand mixer if available.

Add egg and vanilla, mix well.

In a separate bowl, mix the flour, baking soda, and oats. Then add to the mixing bowl and stir well to combine.

Add the cereal and chocolate chips and stir until evenly distributed.

Use a cookie scoop to measure the batter and place about 2 inches apart on the prepared baking sheet. Use your hands to gently flatten each portion of dough into a round shape.
Bake for 10 minutes in the preheated oven. Allow cookies to cool 1 to 2 minutes on the baking sheet before removing to a wire rack to cool completely.
