Blackened Chicken Tenders

Ingredients

  • 1-1.5 pounds chicken tenderloins
  • 1-1.5 tablespoons Cajun seasoning see notes

Instructions

  • Prepare the chicken tenderloins by rinsing in cold water, then patting dry with a paper towel. Lay flat in a single layer on plate and sprinkle half the seasoning over the tenders. Turn over and repeat with the rest of the seasoning.
    1-1.5 pounds chicken tenderloins, 1-1.5 tablespoons Cajun seasoning
  • Place chicken tenders in hot skillet in a single layer. Cook 2 minutes, then turn and cook an additional 1-2 minutes, until done. If using a meat thermometer, cook to 160F.
  • Remove from pan to a plate, cover with foil and let the meat rest for 5 minutes before serving.

To make your own seasoning mix: ½ teaspoon smoked paprika ½ teaspoon dried thyme ½ teaspoon white pepper ½ teaspoon onion powder ½ teaspoon garlic powder ¼ teaspoon salt ¼ teaspoon cayenne pepper ¼ teaspoon ground cumin
