Dorito Casserole with Ground Beef

Delicious taco flavors in a casserole with the special flavor and crunch of Nacho Cheese Doritos!

Ingredients

  • 15 oz Nacho Cheese Doritos
  • 1 pound ground beef
  • 1 packet taco seasoning about 3 tablespoons
  • cup water
  • 15 ounces canned black beans rinsed and drained
  • 1 cup frozen corn thawed
  • 1 cup salsa
  • 1 can cream of chicken soup 10.75 oz condensed
  • 1 cup sour cream 8 ounces
  • 2 cups shredded cheese 4-cheese Mexican or other blend

Instructions

  • Preheat oven to 350F. Prep a 9x13 pan by spraying lightly with cooking spray. Lightly crush the bag of Doritos to break up the chips.

  • In a large skillet on medium to medium-low heat, cook the ground beef until completely browned. Remove excess grease as needed by absorbing it with a paper towel held with tongs.

  • Add the taco seasoning and water. Stir and cook for 2 to 3 minutes to fully distribute the seasoning, then turn off the heat.

  • Add black beans, corn, salsa, condensed soup and sour cream to the skillet and mix well.

  • Layer the ingredients in the prepared 9x13 pan in this order: half the Doritos, then half the meat mixture and half the cheese. Then add the rest of the meat, then the rest of the Doritos and top with the remaining cheese.

  • Cover the dish with a piece of foil (spray lightly first with cooking spray to prevent sticking).
  • Bake the casserole for 30 minutes, covered. Remove the foil and bake an additional 5 to 10 minutes, or until the chips are beginning to brown around the edges.

Notes

Leftovers are yummy, but the Doritos do get soggy. If you’re anticipating a lot of leftovers, omit the Doritos in the bottom of the pan and reserve those to add while serving. You could also eliminate them from the top, but I am too in love with the Dorito-and-melted-cheese combination to give that up easily!
