Juicy tomatoes, crisp cucumbers and tender orzo pasta get a punch of flavor from feta cheese and Kalamata olives. The sunny lemon vinaigrette brings all the flavors together!

- ¾ cup orzo pasta
- ¼ cup red onion chopped
- 1 pint cherry or grape tomatoes halved
- 2 mini cucumbers sliced
- ½ cup feta cheese crumbled (about 4 ounces)
- ¼ cup Kalamata olives sliced
Dressing
- 2 tablespoons olive oil extra-virgin
- 2 tablespoons lemon juice
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon oregano
Cook the pasta according to the package directions, to al dente. Drain and cool.

Cut up the vegetables and crumble the cheese, as needed. Place in a medium bowl with the olives.

In a small cup whisk together the dressing ingredients.
2 tablespoons olive oil, 2 tablespoons lemon juice, ⅛ teaspoon salt, ⅛ teaspoon black pepper, ⅛ teaspoon oregano
Add the cooled pasta and dressing to the bowl and toss together to mix.
Cover and store in the fridge until time to serve.
