Greek Orzo Pasta Salad

Juicy tomatoes, crisp cucumbers and tender orzo pasta get a punch of flavor from feta cheese and Kalamata olives. The sunny lemon vinaigrette brings all the flavors together!

Ingredients

  • ¾ cup orzo pasta
  • ¼ cup red onion chopped
  • 1 pint cherry or grape tomatoes halved
  • 2 mini cucumbers sliced
  • ½ cup feta cheese crumbled (about 4 ounces)
  • ¼ cup Kalamata olives sliced

Dressing

  • 2 tablespoons olive oil extra-virgin
  • 2 tablespoons lemon juice
  • teaspoon salt
  • teaspoon black pepper
  • teaspoon oregano

Instructions

  • Cook the pasta according to the package directions, to al dente. Drain and cool.
    ¾ cup orzo pasta
  • Cut up the vegetables and crumble the cheese, as needed. Place in a medium bowl with the olives.
    1 pint cherry or grape tomatoes, 2 mini cucumbers, ½ cup feta cheese, ¼ cup Kalamata olives, ¼ cup red onion
  • In a small cup whisk together the dressing ingredients.
    2 tablespoons olive oil, 2 tablespoons lemon juice, ⅛ teaspoon salt, ⅛ teaspoon black pepper, ⅛ teaspoon oregano
  • Add the cooled pasta and dressing to the bowl and toss together to mix.
  • Cover and store in the fridge until time to serve.
