Grilled Twice Baked Potato

Make these delicious twice baked potatoes using only your grill! A fantastic side to enjoy all summer long!

Ingredients

  • 2 potatoes baked
  • 2 Tablespoons bacon bits
  • cup sour cream
  • 2 Tablespoons milk or cream
  • 2 Tablespoons butter
  • cup cheddar cheese shredded
  • 2 green onions chopped
  • Salt and pepper to taste

Instructions

  • Bake the potatoes according to your preferred method. Allow to cool at least 20 minutes before handling.

  • Cut each potato in half lengthwise. Scoop the cooked potato from the middle of each half, leaving about ¼ inch attached to the skin as a “wall”.
  • Place scooped potato in a bowl. Add all other ingredients and mix. For a smoother filling, use a hand mixer.
    2 Tablespoons bacon bits, ⅓ cup sour cream, 2 Tablespoons milk or cream, 2 Tablespoons butter, ⅓ cup cheddar cheese, 2 green onions, Salt and pepper to taste
  • Divide the filling between the potato shells, mounding slightly higher that the original level as needed.
  • Place the filled potatoes right on the grates in a preheated (350F) grill over indirect heat. Close the lid and allow the potatoes to cook for 20-30 minutes, until heated through.
  • Serve and enjoy!
