Pressure Cooker Beef Tips

Beef tips in a rich and delicious gravy is comfort food at its best. So tender and full of flavor, perfect on mashed potatoes or egg noodles.

Ingredients

  • 3 tablespoons cooking oil divided
  • 2 pounds beef stew meat or sirloin, cut in cubes
  • 1 large sweet onion diced
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon Italian seasoning
  • 1 sprig fresh thyme*

For thickening:

  • 5 tablespoons cornstarch
  • ½ cup water

For serving:

  • Mashed potatoes or egg noodles

Instructions

  • Turn on the Instant Pot to the sauté setting and add 2 tablespoons oil.

  • Add half the beef cubes and season with salt and pepper. Let the beef brown for about 2 minutes, then stir/flip to brown on the opposite side for a couple minutes. Remove and repeat with the remaining beef, removing all beef and set aside.

  • Add one tablespoon oil to the Instant Pot as well as the diced onion. Cook the onion, stirring and scraping the bottom of the pot, until tender, about 4-5 minutes. Add the minced garlic and cook 30 seconds.

  • Add a little of the beef broth and scrape up the browned bits from the bottom of the pot. Then add the rest of the broth and stir.

  • Add the browned beef and seasonings: Worcestershire sauce, Italian seasoning, bay leaf and the thyme.

  • Close and seal the Instant Pot. Cook on HIGH pressure (meat/stew setting) for 23 minutes.
  • Once the cycle is done, allow the Instant Pot to natural release the pressure for at least 10 minutes, then manually release the rest.
  • Once the pin has dropped, remove the lid from the Instant Pot and set to the sauté setting.
  • Mix the cornstarch with water to make a slurry, then add to the Instant Pot while stirring the contents. Cook and stir until the gravy has thickened, about 2 minutes.

  • Serve over mashed potatoes or egg noodles, as preferred.

Notes

1 teaspoon dried thyme can substitute for the fresh sprig.
