Ingredients

  • 1 pound green beans trimmed and cut into 2-inch pieces
  • 1 tablespoon sweetener sugar or a substitute*
  • ½ teaspoon black pepper
  • 2 cups water or broth
  • 4 slices bacon
  • 1 small yellow onion sliced or chopped

Instructions

  • Add the sweetener and pepper to the water. Stir and set aside.
1 tablespoon sweetener, ½ teaspoon black pepper, 2 cups water or broth
  • Heat a large skillet on medium to medium-high heat and add the bacon. Cook for 4 to 5 minutes until just crisp. Add the onion and cook an additional 4 to 5 minutes, until the onion is translucent and soft.
4 slices bacon, 1 small yellow onion
  • Add the beans and liquid to the skillet and stir. Heat to boiling, then reduce heat and simmer. Cook for about 15 to 20 minutes, stirring occasionally. The liquid will reduce as the beans cook.
    1 pound green beans
  • When the beans are tender, turn off the heat and stir again to distribute the liquid. Transfer the beans to a serving dish and spoon the remaining liquid over the top to maximize the flavor.

Notes

*I typically use granulated monkfruit sweetener instead of sugar in these green beans.
