Ingredients

  • 1 cup canola oil
  • 2 cups sugar
  • 3 eggs large
  • 3 cups flour
  • teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cloves
  • ¼ teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 3 cups apples peeled, cored, and chopped fine (about 1½ pounds)
  • 1 cup pecans chopped

For the Glaze

  • ½ cup butter 1 stick
  • 2-3 tablespoons milk or water
  • 2 teaspoons cinnamon
  • 3-4 cups powdered sugar

Instructions

  • Preheat oven to 350F and lightly grease a Bundt pan with baking spray.
  • In a large mixing bowl, mix the oil, sugar, and eggs until well combined.

  • In a separate bowl. Whisk together the dry ingredients: flour, baking soda, salt, nutmeg, cinnamon, and cloves.

  • Add the flour mixture to the large bowl and stir well to combine. Add vanilla and stir.

  • Fold in the apples and pecans and stir just enough to evenly distribute.

  • Transfer the batter to the prepared pan.
  • Bake in the preheated (350F) oven for 70-75 minutes.
  • Remove the cake for the oven and allow it to cool in the Bundt pan for 15 minutes. Then, invert onto a plate and remove the pan.

To glaze:

  • Melt the butter, then add one cup of powdered sugar and the cinnamon. Stir well, then continue adding powdered sugar, alternating with a little milk, until desired consistency is reached. A very thin glaze will need less sugar, thicker will need more.
