Turkey Lasagna Soup

Ingredients

  • 1 yellow onion chopped
  • 1 pound ground turkey
  • 3 garlic cloves minced
  • Salt and black pepper to taste
  • 4 cups chicken broth
  • 24 ounces marinara sauce
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sweet paprika
  • 2 cups pasta about 6 ounces dry – Mafalda, radiatore, etc.
  • 2 cups spinach leaves about 2 ounces

Instructions

  • In a large (5-6 quart) Dutch oven or soup pot, heat a little olive oil on medium heat and add the chopped onion and ground turkey. Cook 4 to 5 minutes, stirring regularly. The turkey will be mostly cooked but still a little pink.

  • Add the garlic and continue stirring and cooking until the garlic is fragrant, and the turkey is cooked through (about 2 to 3 more minutes). Season with salt and pepper.

  • Add the broth, marinara sauce, tomato paste, and spices. Stir to combine, then turn the heat up a little to medium high.

  • Bring to a boil, then turn the heat to low. Cover and simmer for 15 minutes.
  • Uncover the pot and increase the heat to medium high to bring the soup to a boil. Add the pasta and cook (stirring frequently) 8 to 10 minutes, or al dente per the package directions. Remove the bay leaf.

  • Turn off the heat and add the spinach. Stir, then cover and let the soup sit for 5 minutes to wilt the spinach. Stir again and serve.

Notes

You can use this recipe to make lasagna soup with ground beef or ground pork, if you prefer.
