- ¼ cup olive oil extra-virgin
- 2 tablespoons lemon juice fresh squeezed
- 1 garlic love minced
- salt and pepper - to taste
- 5-6 ounces baby arugula
- 1 avocado chopped
- 1 cup grape tomatoes halved
- ½ cup walnuts rough chopped
- ½ cup shaved Parmesan cheese
In a small bowl, whisk the olive oil, lemon juice, garlic until combined. Add salt and pepper to taste. Set aside.

Place arugula in a large salad bowl and add about half the dressing. Toss gently to coat.
