Arugula Avocado Salad

Ingredients

  • ¼ cup olive oil extra-virgin
  • 2 tablespoons lemon juice fresh squeezed
  • 1 garlic love minced
  • salt and pepper - to taste
  • 5-6 ounces baby arugula
  • 1 avocado chopped
  • 1 cup grape tomatoes halved
  • ½ cup walnuts rough chopped
  • ½ cup shaved Parmesan cheese

Instructions

  • In a small bowl, whisk the olive oil, lemon juice, garlic until combined. Add salt and pepper to taste. Set aside.

  • Place arugula in a large salad bowl and add about half the dressing. Toss gently to coat.

  • Top arugula with tomatoes and avocado. Add remaining dressing and toss again.

  • Top salad with walnuts and Parmesan cheese and serve.
