How to make Arugula Avocado Salad
Make the simple dressing by whisking olive oil, lemon juice, minced garlic and a little salt and pepper in a small cup or bowl.
Add the baby arugula to a large bowl and pour about half of the dressing over the top. Gently toss, trying not to break down the leaves.
Add the tomatoes and avocado. Pour on all of the remaining dressing, then gently toss it again so that everything is coated in the dressing but still intact.
To finish up, add the chopped walnuts and shaved Parmesan. Gently toss and serve.

Ingredients
- ¼ cup olive oil extra-virgin
- 2 tablespoons lemon juice fresh squeezed
- 1 garlic love minced
- salt and pepper - to taste
- 5-6 ounces baby arugula
- 1 avocado chopped
- 1 cup grape tomatoes halved
- ½ cup walnuts rough chopped
- ½ cup shaved Parmesan cheese
Instructions
