    In the mood for a new salad? How about one with arugula and avocado?

    Arugula is a nice departure from the usual, and the perfect green for this salad. Baby arugula leaves are delicate and light, but still have a peppery flavor that contrasts nicely with the creaminess of avocado. The walnuts add texture and crunch to the salad. Tomatoes provide an acidic burst of flavor while Parmesan cheese provides a salty bite.

    Why I Love this Salad Recipe

    Eat your greens! Full of vitamins and antioxidants and with virtually no calories, green leafy vegetables are a near perfect food. But greens alone can get boring, so we all need some delicious salad recipes in our arsenal to help keep the menu interesting.

    This avocado, arugula and tomato salad is a great alternative to the boring old lettuce based salad. It's bursting with flavor, colors and textures and will make you feel so healthy once you've eaten it!

    Plus, it's really fast to make. Only 10 minutes to put it all together at most - what's not to love with that?

    Ingredients Needed

    ingredients: arugula, avocado, grape tomatoes, lemon, parmesan, olive oil, walnuts

    How to make Arugula Avocado Salad

    Make the simple dressing by whisking olive oil, lemon juice, minced garlic and a little salt and pepper in a small cup or bowl.

    Add the baby arugula to a large bowl and pour about half of the dressing over the top. Gently toss, trying not to break down the leaves.

    Add the tomatoes and avocado. Pour on all of the remaining dressing, then gently toss it again so that everything is coated in the dressing but still intact.

    To finish up, add the chopped walnuts and shaved Parmesan. Gently toss and serve.

    Ingredients

    • ¼ cup olive oil extra-virgin
    • 2 tablespoons lemon juice fresh squeezed
    • 1 garlic love minced
    • salt and pepper - to taste
    • 5-6 ounces baby arugula
    • 1 avocado chopped
    • 1 cup grape tomatoes halved
    • ½ cup walnuts rough chopped
    • ½ cup shaved Parmesan cheese

    Instructions

    • In a small bowl, whisk the olive oil, lemon juice, garlic until combined. Add salt and pepper to taste. Set aside.
