If you’re looking for a light and delicious salad for a summertime meal, you’re at the right place! This strawberry walnut salad is bursting with sweet strawberries, tangy feta cheese and the nutty satisfaction of walnuts all nestled on a bed of crisp healthy greens.
This salad makes a wonderful light lunch, especially on a hot day. But it can also be divided into smaller portions for a fun and delicious side salad.
Why I love this salad
This salad is all about keeping it simple. A short ingredient list that is also flexible. I add feta cheese, but goat cheese would also be a great choice. I use spring mix for the greens. You might want to try baby spinach or a different mix.
For an extra layer of flavor, cut up some red onion and add it to the salad. Sometimes you need that little bit of extra “bite” that only an onion will provide.
If you’d like to add some protein to make this a heartier meal, cooked chicken is always a popular choice. But also consider edamame. Its neutral taste works so well on salads, and it will add protein while keeping your meal completely vegetarian!
And of course, the choice of salad dressing is yours. I like a simple balsamic vinaigrette, but this salad is also great with ranch dressing. If you have a favorite salad dressing, give it a try!

Put together your strawberry walnut salad
Start by prepping your ingredients. I buy packaged spring mix so there’s no chopping required there! Rinse the greens, strawberries and tomatoes, and slice or halve the berries as preferred. I buy walnuts as “pieces and halves” so again, they are ready to add.

Simply arrange the greens on a plate or bowl, and layer the strawberries, tomatoes, walnuts and cheese. This salad can be assembled on plates and then refrigerated until time to serve.
Serve with balsamic vinaigrette or your choice of dressings.

When I see edamame in the grocery store, it is a package of beans in the shell or pod. The instructions are to cook the pods and then remove the beans from the pods. When I find mukimame, the beans are already shelled from the pod.
As near as I can tell, the terms edamame and mukimame both refer to the same thing: immature soybeans (No, they aren’t clumsy or shy). When the beans are picked while still green, they are sweeter than soybeans picked later in the growing season. They taste delicious to me, with a pinch of salt to enhance the flavor.
Strawberries are packed with vitamins, fiber and high levels of antioxidants. They are among the top 20 fruits in antioxidant capacity and are a good source of manganese and potassium.
One of the worries with strawberries, as well as many other berries, is that they commonly contain pesticide residue, so purchase organic berries whenever possible.

Ingredients

- ½ cup walnuts halves and pieces

Instructions
