    Easy Shredded Beef in the Crockpot

    When I know I'm going to be out of the house most of the day, I love setting up the Crockpot to do my cooking for me. And shredded beef is the perfect example. Once cooked, you can let the slow cooker revert to its "stay warm" setting and you don't have to worry about "being there" to turn off the oven or take care of any steps.

    Once you're ready, you simply shred the beef and serve it on buns. Easy peasy!

    Ingredients for Slow Cooker Shredded Beef

    • Beef - I use a chuck roast for this
    • Beef broth
    • Onion - I like to use a sweet yellow onion
    • Italian seasoning mix (the stuff to make salad dressing)
    • Seasonings: garlic powder, salt, back pepper

    How to Make this Easy Shredded Beef in a Crockpot

    Heat a skillet on medium-high heat with a little oil or butter.

    Mix the garlic powder, salt and pepper in a small bowl. Sprinkle one side of the chuck roast with half of the seasonings. Place the roast seasoned side down in the hot pan, then sprinkle the exposed side with the rest of the seasonings. Sear the roast about 3-5 minutes on each side, then transfer to the slow cooker.

    Add the sliced onion, the Italian dressing mix, and the beef broth. Cover and slow cook for 6.5 hours on low. When the cycle is done, let the slow cooker move to the "keep warm" setting. I like to leave this at this setting for at least 30 minutes, but it can go much longer if needed.

    When you're ready, just shred the meat using 2 forks, removing any extra fat as needed.

    Serving Suggestions

    This shredded beef makes a great sandwich, using a lightly toasted burger bun and condiments of choice. I like mayo or barbecue sauce - or sometimes both! You can even put a slice of melty cheese on the sandwiches for another level of yum. Add a side of pasta salad and/or a green vegetable and you have an easy meal that everyone will love.

    But since the taste is fairly neutral, you can definitely mix things up, especially with leftovers. Here are a few suggestions:

    • Season with taco or chili-lime seasoning and use for beef tacos, burritos or salads (a bit of creamy cilantro lime dressing is my favorite drizzle)
    • Make beef burrito bowls with sweet potatoes, corn, and shredded greens
    • Make it a breakfast bowl with breakfast potatoes and a fried egg - yum!

    Storage

    When in the crockpot, the beef is pretty much swimming in liquid by the time it's done cooking. I try to drain a bunch of that off before adding the beef to a sandwich bun, so the bread doesn't get all soggy.

    But for leftovers, I like to spoon some of the liquid over the meat before placing the lid on the airtight container. This helps keep the meat nice and moist and full of flavor. Because nobody wants dried out beef!

    This beef will keep in the fridge for several days, just reheat to serve. For longer storage, place in the freezer for up to a couple months.

    Crockpot Shredded Beef

    Ingredients

    • 3 pound chuck roast
    • 1 sweet yellow onion sliced
    • 1 cup beef broth
    • 0.7 ounce Italian dressing mix one envelope
    • 1 teaspoon garlic powder
    • 1 teaspoon salt
    • 1 teaspoon black pepper

    Instructions

    • Mix the seasonings in a small cup. Sprinkle half the seasoning over one side of the roast.

    • Heat a little oil or butter in a skillet over medium-high heat. When hot, add the roast, seasoned side down. Sprinkle the exposed side with the rest of the seasonings.

    • Sear the roast in the hot skillet for about 3-5 minutes per side. Once seared, transfer to the slow cooker.
    • Add the remaining ingredients to the slow cooker and cover. Set the cook cycle for 6.5 hours on Low.
      1 sweet yellow onion, 1 cup beef broth, 0.7 ounce Italian dressing mix
    • Once the cycle is done, let the slow cooker revert to "keep warm" for at least 30 minutes. (but longer is ok)
    • When ready to serve, use two forks to shred the beef, discarding any excess fat as needed.
    • Serve on buns, in bowls, or as you prefer!
