- 8 ounces rotini pasta about 3 cups
- 3-4 cups chicken cooked cubed or shredded
- 29 ounces tomato sauce large can
- 14 ounces diced tomatoes drained
- 10-12 ounces frozen spinach thawed and squeezed dry
- ½ cup Kalamata olives sliced
- ¼ cup red onion thinly sliced
- ¼ cup green bell pepper chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup mozzarella cheese shredded
- ½ cup feta cheese crumbled
Preheat your oven to 400F. Lightly spray a 13x9-inch pan with cooking spray.
Cook pasta according to package directions, then drain.

In a large bowl, combine all the ingredients except the cheeses. Transfer into the prepared pan.
3-4 cups chicken cooked, 29 ounces tomato sauce, 14 ounces diced tomatoes, 10-12 ounces frozen spinach, ½ cup Kalamata olives, ¼ cup red onion, ¼ cup green bell pepper, 1 teaspoon dried basil, 1 teaspoon dried oregano
Sprinkle the feta cheese evenly over the top of the casserole, then do the same with the mozzarella.
½ cup feta cheese, 1 cup mozzarella cheese
Bake, uncovered, until heated through and the cheeses are melted, about 25 minutes.
The casserole is ready to serve right away.
Instead of rotini pasta, you can try fusilli or radiatore.
Add other vegetables if desired, but most will need to be pre-cooked.
