This recipe is easy to make, because it uses already-cooked chicken. Rotisserie chicken for the win!

How to Make this Greek Chicken Casserole
What makes casseroles so easy is that most of the parts are cooked in advance. It makes mealtime a breeze!
Start by cooking the pasta according to the package directions. I like rotini best for this, but any pasta with ridges for the sauce to cling to will work. Think radiatore, fusilli, etc.
While the pasta is cooking, prep everything else. Cut up the green pepper and red onion and measure out the spices.
Since I use frozen spinach, I usually microwave it for a couple minutes to thaw, then squeeze and drain to get rid of the excess liquid.
Once the pasta is cooked and drained, add it to a large mixing bowl with all the other ingredients, except the cheeses.
Lightly spray a 9x13 pan with cooking spray, then transfer the casserole mixture into the pan.
Evenly spread the crumbled feta cheese over the top, then sprinkle with the shredded cheese.
Place the dish in a preheated oven and bake, uncovered, until heated through (about 25 minutes). The cheese will be melted and the casserole will be bubbly and hot.
Serving Suggestions
You can serve the Greek Chicken Casserole with a side of fluffy rice, quinoa, or vegan garlic bread to soak up the flavorful juices.
I like a simple green salad and/or a green vegetable, but a Greek salad with cucumber, red onion, and feta cheese would also complement the dish perfectly.
Substitutions and Variations
If you don't have any leftover or rotisserie chicken, cook up some ground chicken or turkey to add to the casserole.
For a vegetarian version, omit the meat and add more vegetables, such as zucchini, eggplant, or mushrooms.
If you're not a fan of olives, you can omit them or substitute with capers.
Storage
This recipe does make a lot, so store any leftovers in an airtight container in the fridge. I usually reheat in the microwave to serve.

- 14 ounces diced tomatoes drained
- 10-12 ounces frozen spinach thawed and squeezed dry
- ½ cup Kalamata olives sliced
- ¼ cup red onion thinly sliced
- ¼ cup green bell pepper chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup mozzarella cheese shredded
- ½ cup feta cheese crumbled
Instructions
- Preheat your oven to 400F. Lightly spray a 13x9-inch pan with cooking spray.
