    When it comes to comforting and hearty meals, nothing beats a baked pasta dish. One of my all-time favorites is Greek Chicken Casserole, a delicious and flavorful recipe that combines the classic Italian pasta with Mediterranean flavors.

    This recipe is easy to make, because it uses already-cooked chicken. Rotisserie chicken for the win!

    It's perfect for a weeknight family dinner, or whenever you're in the mood for its rich and comforting flavors.

    Why I Love This Casserole

    There are many reasons why I love this recipe. It's a perfect combination of pasta, meat, and vegetables, making it a complete meal in itself.

    I love how the Greek flavors add a unique and exciting twist to the classic pasta dish.

    Most importantly, it's a simple and easy-to-follow recipe that yields fantastic results every time.

    Ingredients Needed

    Ingredients: chicken, tomato sauce, diced tomatoes, spinach, pasta, green pepper, olives, feta cheese, mozzarella, red onion, oregano and basil.

    How to Make this Greek Chicken Casserole

    What makes casseroles so easy is that most of the parts are cooked in advance. It makes mealtime a breeze!

    Start by cooking the pasta according to the package directions. I like rotini best for this, but any pasta with ridges for the sauce to cling to will work. Think radiatore, fusilli, etc.

    While the pasta is cooking, prep everything else. Cut up the green pepper and red onion and measure out the spices.

    Since I use frozen spinach, I usually microwave it for a couple minutes to thaw, then squeeze and drain to get rid of the excess liquid.

    Once the pasta is cooked and drained, add it to a large mixing bowl with all the other ingredients, except the cheeses.

    Lightly spray a 9x13 pan with cooking spray, then transfer the casserole mixture into the pan.

    Evenly spread the crumbled feta cheese over the top, then sprinkle with the shredded cheese.

    Place the dish in a preheated oven and bake, uncovered, until heated through (about 25 minutes). The cheese will be melted and the casserole will be bubbly and hot.

    Serving Suggestions

    You can serve the Greek Chicken Casserole with a side of fluffy rice, quinoa, or vegan garlic bread to soak up the flavorful juices.

    I like a simple green salad and/or a green vegetable, but a Greek salad with cucumber, red onion, and feta cheese would also complement the dish perfectly.

    Substitutions and Variations

    If you don't have any leftover or rotisserie chicken, cook up some ground chicken or turkey to add to the casserole.

    For a vegetarian version, omit the meat and add more vegetables, such as zucchini, eggplant, or mushrooms.

    If you're not a fan of olives, you can omit them or substitute with capers.

    Storage

    This recipe does make a lot, so store any leftovers in an airtight container in the fridge. I usually reheat in the microwave to serve.

    Can I use a different type of cheese instead of feta?

    The feta cheese does provide a distinctive taste to the mixture, but if you don't have any you can eliminate it or substitute with ricotta or goats cheese.

    Can I freeze this casserole?

    Yes, once assembled wrap the casserole in plastic wrap and foil and freeze up to 3 months. To cook, remove the plastic wrap and foil, and bake in a preheated oven at 375°F for 45-50 minutes, or until heated through and bubbly.

    Can I add other vegetables to this recipe?

    Yes, you can add any vegetables you like, such as kale or carrots. Just be sure to cook them first before adding them to the pasta and meat mixture.

    Ingredients

    • 8 ounces rotini pasta about 3 cups
    • 3-4 cups chicken cooked cubed or shredded
    • 29 ounces tomato sauce large can
    • 14 ounces diced tomatoes drained
    • 10-12 ounces frozen spinach thawed and squeezed dry
    • ½ cup Kalamata olives sliced
    • ¼ cup red onion thinly sliced
    • ¼ cup green bell pepper chopped
    • 1 teaspoon dried basil
    • 1 teaspoon dried oregano
    • 1 cup mozzarella cheese shredded
    • ½ cup feta cheese crumbled

    Instructions

    • Preheat your oven to 400F. Lightly spray a 13x9-inch pan with cooking spray.
    • Cook pasta according to package directions, then drain.
      8 ounces rotini pasta
    • In a large bowl, combine all the ingredients except the cheeses. Transfer into the prepared pan.
      3-4 cups chicken cooked, 29 ounces tomato sauce, 14 ounces diced tomatoes, 10-12 ounces frozen spinach, ½ cup Kalamata olives, ¼ cup red onion, ¼ cup green bell pepper, 1 teaspoon dried basil, 1 teaspoon dried oregano
    • Sprinkle the feta cheese evenly over the top of the casserole, then do the same with the mozzarella.
      ½ cup feta cheese, 1 cup mozzarella cheese
    • Bake, uncovered, until heated through and the cheeses are melted, about 25 minutes.
    • The casserole is ready to serve right away.

    Instead of rotini pasta, you can try fusilli or radiatore.
    Add other vegetables if desired, but most will need to be pre-cooked.

      This was such healthy alternative to getting Greek takeout, I really liked the zesty flavours of the feta cheese mixed with the shredded chicken and olives. My family has a potluck party soon and I will for sure be making this for everyone to enjoy.

      This was delicious and so cheesy! I had to leave the olives out because my husband isn't a fan, but I added them on top of my serving it worked great.

      This was just amazing!!!
      The kids wolfed it down and hubby said it was one of the best pasta bakes I have made!!
      I loved the olives in it and the salty fetta was perfect, the only change I made was to use red bell pepper as I really don't like the taste of the green ones.
      It was soo good!!
      We had it with a side of greek lettuce salad and everyone was happy 🙂
