- ⅔ cup water
- ⅔ cup sugar granulated
- 1 cup raspberries fresh
In a small saucepan, bring the water and sugar to a boil over medium heat, stirring occasionally. Continue boiling about 5 minutes, until the sugar is completely dissolved.
⅔ cup water, ⅔ cup sugar
Remove saucepan from heat and add in the raspberries.
1 cup raspberries
Use a potato masher or fork to mash the berries. Set aside and let the mixture steep for an hour.
Pour the berry mixture through a fine mesh strainer to separate the liquid from solids. Use a spatula or the back of a spoon to press on the pulp and extract as much liquid as possible.
Transfer the liquid to a small covered jar and store it in the fridge until you are ready to use it.
This recipe yields about 6-8 ounces of simple syrup. I assumed 6, one ounce servings for the calculation estimates.
To use frozen berries, add the raspberries to the saucepan as soon as the sugar is dissolved and while still on the heat. Heat and stir until the berries are fully thawed. Steep, strain, and store as directed.
