If you love the taste of raspberry, a good recipe for syrup is a must. Raspberry simple syrup gives you the perfect sweet-tart flavor in a pourable form, ready to add to your cocktail, mocktails, lemonade, pancakes, or anything that needs a pop of bright berry flavor.

I tried for over a year to perfect a martini using fresh raspberries and finally realized that a raspberry simple syrup was a much better solution! It is honestly so easy and I end up with a delicious syrup that works every time - perfection!

    1. Add the water and sugar to a small saucepan on medium heat. Heat the mixture to boiling, stirring occasionally, until the sugar is completely dissolved. This will usually take at least 5 minutes.

    2. Remove the saucepan from the heat and add in the raspberries. Mash the berries with a potato masher or a fork. Then set the saucepan aside and allow the mixture to steep for an hour.

    Adding berries and mashing.

    3. Use a fine mesh strainer to drain the liquid and separate out the seeds and pulp. I like to press a spatula against the pulp to squeeze as much liquid out as possible.

    4. Transfer the liquid to a small jar with cover and store it in the fridge. This will keep for about 2 weeks, but it might not last that long depending upon what you're making with it. 🙂

    Sula's Tip

You can also make this with frozen berries. To do this, dissolve the sugar as directed, but once the solution is clear add the frozen berries to the saucepan and continue heating until the berries are fully dissolved. When you remove from the heat, very little mashing will be needed. Steep, strain, and store per usual.

    Ingredients

    • ⅔ cup water
    • ⅔ cup sugar granulated
    • 1 cup raspberries fresh

    Instructions

    • In a small saucepan, bring the water and sugar to a boil over medium heat, stirring occasionally. Continue boiling about 5 minutes, until the sugar is completely dissolved.
⅔ cup water, ⅔ cup sugar
    • Remove saucepan from heat and add in the raspberries.
      1 cup raspberries
    • Use a potato masher or fork to mash the berries. Set aside and let the mixture steep for an hour.
    • Pour the berry mixture through a fine mesh strainer to separate the liquid from solids. Use a spatula or the back of a spoon to press on the pulp and extract as much liquid as possible.
    • Transfer the liquid to a small covered jar and store it in the fridge until you are ready to use it.

    Notes

This recipe yields about 6-8 ounces of simple syrup. I assumed 6, one ounce servings for the calculation estimates.
To use frozen berries, add the raspberries to the saucepan as soon as the sugar is dissolved and while still on the heat. Heat and stir until the berries are fully thawed. Steep, strain, and store as directed.
