During the warm weather stretches of summer, I like to regularly make big salads for dinner. And I usually default to chicken for the protein, but the hubs asked if we could make it steak salad sometimes, and I was happy to comply.
I love the combination of blue cheese with beef, but sometimes store-bought blue cheese dressings are stronger than I want. So I developed this one with milder Gorgonzola cheese: its smoother, milder, but still keeps some of that "tang" that blue cheese dressing is known for.
Once you give it a try, I know you'll agree that taking 5 minutes to make your own dressing is well worth the final result!

Ingredients needed for Blue Cheese Dressing with Gorgonzola
- 1 cup mayonnaise
- ¾ cup buttermilk
- 4 ounces Gorgonzola blue cheese
- 1 tablespoon Worcestershire sauce
- ½ teaspoon garlic powder

How to Make Blue Cheese Dressing with Gorgonzola
This one comes together fast, no cooking involved.
Add the mayonnaise, buttermilk, Gorgonzola, Worcestershire, and garlic powder to a small blender or food processor. Process for 1 to 2 minutes, until smooth.

Pour it into a jar with a lid and refrigerate until you're ready to serve.
This makes a little over 2 cups, plenty for several salads through the week.

Serving suggestions and variations
This is exactly what I reach for on a steak salad, but it holds its own over a plain bowl of tossed greens too. But don't limit yourself to just dressing salads. It also works as a dip if you want something to serve alongside a tray of veggies, or chicken wings. Use it as a sauce for sandwiches or burgers to really make the flavors pop.

If you like your blue cheese dressing on the sharper side, you can use a stronger blue cheese in place of the Gorgonzola. I like Gorgonzola here because it keeps things mild enough for regular rotation, but you can easily push it in a bolder direction depending on what you're serving it with.
Similarly, you could use sour cream in place of some or all of the mayo, which will add some more tang to the final dressing.
For a chunkier consistency, stir in some extra Gorgonzola blue cheese crumbles once it's done blending.
Storage of Homemade Blue Cheese Dressing
Keep it in a jar or other airtight container with a tight lid in the fridge, and use it within about a week. Give it a stir before serving, since it can separate slightly as it sits.
How is Gorgonzola Different from other Blue Cheese?
Gorgonzola is Italian blue cheese, made specifically from cow's milk. It tends to be creamier and smoother, with a milder taste than other blue cheeses.
By comparison, Roquefort is made from sheep's milk, and Stilton has a specific aging process which result in a more intense flavor than you will find in Gorgonzola.
