Ingredients

  • 1 box Red Velvet cake mix 15.25 ounces
  • 2 eggs
  • ½ cup canola oil
  • 1 cup white chocolate chips

Instructions

  • In a large mixing bowl, combine cake mix, oil and eggs. Stir until a smooth dough forms. Add the white chocolate chips and stir to evenly distribute throughout the dough. Cover and refrigerate at least 15 minutes to firm the dough.

  • Preheat oven to 350F. Line a baking sheet with parchment paper.
  • Make 1 to 2-inch balls of the chilled dough and place on the baking sheet, spaced 2-3 inches apart. I use a medium (2 tablespoon) cookie scoop for this.
  • Bake for 10 to 12 minutes in the preheated oven. Cool at least 5 minutes on the baking sheet before removing to a wire rack to cool completely.
