    How to Make Red Velvet Cake Mix Cookies

    Starting with cake mix means you only need three more ingredients: eggs, oil, and white chocolate chips.

    Add the eggs and oil to the dry cake mix and stir well until completely combined. Then add the white chocolate chips and stir to evenly distribute.

    Cover the bowl and refrigerate the dough for at least 15 minutes. In the meantime, preheat the oven to 350F and line a baking sheet with parchment paper.

    Once the dough is chilled and firm, measure out the dough and place on the prepared baking sheet, spaced about 2 -3 inches apart. I use a medium cookie scoop for these cookies. It holds 2 tablespoons, which makes a nice medium-sized cookie.

    Bake for 10 to 12 minutes. The cookies will be spread out but still puffy, the edges lightly golden brown. Leave the cookies on the baking sheet for at least 5 minutes before transferring to a wire rack to finish cooling.

    Substitutions and Variations

    Ingredients

    • 1 box Red Velvet cake mix 15.25 ounces
    • 2 eggs
    • ½ cup canola oil
    • 1 cup white chocolate chips

    Instructions

    • In a large mixing bowl, combine cake mix, oil and eggs. Stir until a smooth dough forms. Add the white chocolate chips and stir to evenly distribute throughout the dough. Cover and refrigerate at least 15 minutes to firm the dough.

      I use the water the cake mix called for, was it omitted on purpose?

        The water was omitted on purpose. Adding it would make the batter much too runny to form into a cookie.

      These were delicious!
      I made them exactly as you suggested and they made a nice big cookie perfect for my afternoon tea break.

      I’ll definitely make them again and next time I going to follow your suggestion to make them smaller for a Christmas cookie plate.

      Love the white chips in there. But I do miss frosting so maybe I’ll try that too. Do you have a recipe?

      Either way we loved them and they’ll be a regular for us ☺️
