I've been baking for years, and if there's one thing I know, it's that homemade treats don't have to be complicated. That's why I love this recipe, it starts with a simple boxed brownie mix, so you get all the rich, fudgy goodness without extra fuss. It's the perfect baking activity to do with kids who are just learning their way around the kitchen!
Bake them in a mini muffin tin, and stuff them with a mini peanut butter cup. It makes about 48 bite-sized treats, perfect for sharing (or keeping a stash for yourself).
Let's be honest, this is a rich combination, and for most people, a couple of bites are plenty. But I've seen firsthand how quickly they disappear-one taste and suddenly "just one" turns into "maybe two... or three." They're easy to make, hard to resist, and always a hit wherever I take them!

Simple Peanut Butter Brownie Bites
The approach is so very simple, and I use a box brownie mix to make it even more so. If you have a favorite homemade brownie recipe, feel free to use that here.
And you can certainly decorate the tops with sprinkles to suit any occasion, but mostly I like to keep them plain. Peanut butter and chocolate are so perfect together, I feel there's no embellishment needed.

How to Make Peanut Butter Cup Brownie Bites
The prep is easy: prepare the brownie batter according to the directions on the box. Unwrap the miniature peanut butter cups.
Line a mini muffin pan with mini foil liners. The liners I used have paper on the inner surface but worked out fine. The foil liners seem to have more strength than the all-paper ones and are less likely to tear and stay stuck to the brownie bite when you're trying to unwrap it.
Fill each of the liners about half-way (up to ¾ ) with the brownie batter. Then, place a miniature peanut butter cup in the center of each one and push down. The brownie batter you displace will come just to the top of the foil liner.

Once the muffin tin is full, it's time to bake. These little brownie bites only need to bake for 20 minutes at 325F. Then, let them cool in the pan for 5 minutes before removing and cooling fully.
And then, just try to keep yourself from eating them all, one bite at a time!

Variations for Brownie Bites from Mix
- Use the crunchy peanut butter cups for a different texture.
- Try the dark chocolate peanut butter cups for an even deeper chocolate flavor.
- Drizzle a little caramel sauce and a sprinkle of sea salt on top for a salted caramel flair.
- If you want a festive flair, sprinkle the tops (while still warm) with red and green sprinkles or edible glitter for a fun holiday feel.
- Seasonal peanut butter cups (white chocolate with red or green filling) would be the perfect touch for a holiday cookie tray.
How to store Peanut Butter Cup Brownies
Let the cookies cool completely and then store in an airtight container. If you are stacking the cookies, a piece of parchment or wax paper between the layers will help prevent sticking. They will keep at room temperature for up to 3 days or up to a week in the refrigerator.
If you like to bake and freeze ahead (perfect for holiday baking!) place brownie bites in a single layer on a baking sheet and freeze until solid (about 1 hour).
Once frozen, you can transfer to a freezer-safe bag or container, separating layers with parchment paper. You can store them for up to 3 months.
