    Cake Mix Waffles

    There’s something special about having waffles for breakfast. Especially if you have a choice of toppings. Maple syrup of course, but a berry sauce and whipped cream make them even more special.

    When feeding a group, it’s fun to have choices in waffles as well. I like to make standard waffle batter, and then sometimes a different flavor. Then everyone has waffle choices.

    Using cake mix to make the batter makes it super easy. That’s how I became a fan of these chocolate cake mix waffles. The batter is easy, fast and reliable, and it makes a delicious chocolate waffle.

    It’s like having dessert for breakfast. Yes please!

    Why I love this recipe

    Using a box of cake mix guarantees easy and delicious waffle batter. And I made mine chocolate, but in theory you could make these with any flavor cake mix you want. Funfetti cake mix waffles? They would be perfect for a birthday breakfast!

    Ingredients

    The only ingredients you need are, of course, a box of cake mix plus those called for on the box: eggs, water and oil. And you can certainly use the entire box of cake batter, but I made mine with half, just as I did to make Oreo cupcakes. That way, I didn’t end up with an impossibly large batch of batter to make into waffles. (see recipe card for proportions of ingredients)

    How to make these cake mix waffles

    Mix the dry cake mix with the eggs, oil and water. Use a hand mixer or whisk to eliminate lumps.

    Preheat your waffle maker. I used a Dash mini waffle maker. Spoon about ¼ cup batter onto the hot waffle iron and close the lid. Cook until the waffle iron signals it is ready. Leaving the waffle in the iron a little longer will yield crispier edges, or you can pop the cooked waffle in a toaster to get the same result.

    Serve with toppings of choice. I made berry sauce from frozen strawberries and some whipped cream which was incredibly delicious with the chocolate cake mix waffles.

    Recipe FAQ

    What kind of waffle iron works best for these waffles?

    You don’t need a special kind or brand of waffle iron, just use what you have or prefer. I have both an Oster Belgian waffle iron for full sized waffles, and a Dash mini waffle iron which is what I used this time to make these cake mix waffles. But honestly, both waffle irons work great for me. In fact, I love having both in the house so I can have 2 waffle irons going at once. Perfect when making waffles for a group!

    Can I save the extra batter to make the next day?

    The batter would probably be ok the next day, but a better approach for extra batter is to simply cook it all into waffles. Then freeze them separately for future use. When you want a quick breakfast, just pop a frozen waffle in the toaster and let the toaster warm it through and make it crispy. What a great way to start the morning!

    Ingredients

    • 1½ cup cake mix
    • ½ cup water
    • 1½ tablespoons vegetable oil
    • 1 egg
    • 1 egg yolk

    Instructions

    • Mix all ingredients well using a hand mixer or whisk to eliminate lumps.
    • Preheat waffle iron. If needed, spray lightly with cooking oil. Add batter and cook according to manufacturer’s directions. For a Dash mini waffle iron, use about ¼ cup batter and cook until the light indicates the waffle is ready.
    • When waffle is done, remove and serve.
