Poaching
To poach chicken for shredding, use chicken breasts or thighs with the bone and skin. Cooking with the bone in will make the finished chicken more flavorful.
For one chicken breast, add a cup of chicken broth, a slice of onion and a clove of garlic. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the chicken is no longer pink inside.
Drain and let the chicken cool enough to handle. Shred with two forks or your fingers, discarding the bones and skin.
Slow Cooker
Using a slow cooker takes longer but is convenient since you don't have to watch a pot on the stove. Simply place the chicken in the slow cooker, cover with chicken broth and let cook on low for about four hours or until chicken is no longer pink inside. Drain and let the chicken get cool enough to handle. Shred with two forks or using your fingers, discarding the bones and skin.
Instant Pot
You can use your Instant Pot to quickly cook your chicken, like I did with salsa chicken. I usually cook a bunch of boneless skinless thighs this way, using about a cup of liquid and an 18 minute cook cycle. Perfectly shredded chicken in a fraction of the time!
Flavorings
Whether you're using a pot or the slow cooker, you can add flavorings to the poaching water depending on how you will be using the chicken.
Herbs such as oregano, bay leaves, marjoram and cilantro are complementary to many other dishes, especially Italian and Mexican ones. Aromatics such as onion, garlic, carrots and celery also add flavor.
The Easiest of All: Rotisserie Chicken
When time is short, nothing beats the convenience of buying a rotisserie chicken. You can quickly pull the meat off the bones and it’s ready to use in any of these recipes!
