Why You Will Love this Recipe

The sweetness of cake, in a soft and chewy cookie. The sprinkles inside are like a pop of happiness in every bite!

Starting with a cake mix means you only need 3 ingredients for these cookies. But plan on 4, because you'll want to add more sprinkles beyond what is already in the cake mix.

Those additional sprinkles make the cookies easy to customize. Use red and green to make Christmas Funfetti cookies, orange and purple for Halloween, pink or blue for baby showers ….. so many possibilities!

    Ingredients Needed

Ingredients: Funfetti cake mix, canola oil, eggs, extra sprinkles.

How to Make Funfetti Cookies from Cake Mix

In a large mixing bowl, combine the Funfetti cake mix with oil and eggs. Mix until the dough is smooth.

Cover and refrigerate the dough for at least 15 minutes.

    Mixed cookie dough.

In the meantime, preheat the oven to 350F and line a baking sheet with parchment paper.

Drop a 1-inch ball of dough onto the prepared baking sheet. I use a small cookie scoop for this, it helps to ensure uniform sized cookies. Repeat while spacing the dough a few inches apart to allow the cookies to spread.

Balls of dough spaced apart on baking sheet.

Use the extra sprinkles to place on top of the raw dough balls.

Bake the cookies for 10 minutes. Remove the baking sheet from the oven and carefully transfer the cookies to a wire rack to cool.

💭Top tip: do not overbake the cookies. For me, they are just barely golden brown on the edges at the 10-minute mark. They will continue to firm up as they cool.

    Substitutions and Variations

This is the fun part! I love to use rainbow sprinkles on top of each cookie for the extra fun and pop of color they provide.

But Christmas themed sprinkles also work great! I tried using the classic "jimmies" but also used other shapes. The little balls, round discs, even tree shapes all worked great!

Just place the sprinkles on the dough before baking. The sprinkles will spread with the dough and bake slightly into the cookies. It's probably one of the easiest Christmas cookies you'll ever make!

    Storage

Store your Funfetti Cake Mix Cookies in an airtight container at room temperature for up to a week. If you want to extend their shelf life, you can also freeze them for up to three months.

    Recipe FAQs

Can I use another kind of cake mix?

Sure, if you can't find Funfetti cake mix, you can use a yellow cake mix and add about ½ cup of sprinkles to the dough.

Can I use more add-ins for these cookies?

Yes, try adding mini chocolate chips or chopped nuts for even more fun!

Can I make the dough in advance?

Yes, you can prepare the dough and refrigerate it for up to 24 hours before baking.

    Ingredients

    • 1 box Funfetti Cake Mix 15.25 oz
    • ½ cup canola oil
    • 2 large eggs
    • Sprinkles for decorating

    Instructions

    • In a large mixing bowl, combine cake mix, oil and eggs. Stir until a smooth dough forms. Cover and refrigerate at least 15 minutes to firm the dough.
1 box Funfetti Cake Mix, ½ cup canola oil, 2 large eggs
    • Preheat oven to 350F. Line a baking sheet with parchment paper.
    • Make 1-inch balls of the chilled dough and place on the baking sheet, spaced 2-3 inches apart.
    • To add additional sprinkles, flatten the top of the dough slightly with the back of spoon and then add about ¼ teaspoon of sprinkles. The flattening helps prevent the sprinkles from simply rolling off the dough.
