How to Make Funfetti Cookies from Cake Mix
In a large mixing bowl, combine the Funfetti cake mix with oil and eggs. Mix until the dough is smooth.
Cover and refrigerate the dough for at least 15 minutes.
In the meantime, preheat the oven to 350F and line a baking sheet with parchment paper.
Drop a 1-inch ball of dough onto the prepared baking sheet. I use a small cookie scoop for this, it helps to ensure uniform sized cookies. Repeat while spacing the dough a few inches apart to allow the cookies to spread.
Use the extra sprinkles to place on top of the raw dough balls.
Bake the cookies for 10 minutes. Remove the baking sheet from the oven and carefully transfer the cookies to a wire rack to cool.
💭Top tip: do not overbake the cookies. For me, they are just barely golden brown on the edges at the 10-minute mark. They will continue to firm up as they cool.
Substitutions and Variations
This is the fun part! I love to use rainbow sprinkles on top of each cookie for the extra fun and pop of color they provide.
But Christmas themed sprinkles also work great! I tried using the classic “jimmies” but also used other shapes. The little balls, round discs, even tree shapes all worked great!
Just place the sprinkles on the dough before baking. The sprinkles will spread with the dough and bake slightly into the cookies. It’s probably one of the easiest Christmas cookies you’ll ever make!
Storage
Store your Funfetti Cake Mix Cookies in an airtight container at room temperature for up to a week. If you want to extend their shelf life, you can also freeze them for up to three months.
