    Ingredients Needed

    Ingredients: hash browns, half&half, eggs, chorizo sausage, red pepper, cheese, garlic, and onion.

    How to Make Chorizo Egg Bake

    Preheat the oven to 375F and spray an 11x7-inch baking pan with cooking spray.

    In a nonstick skillet, cook and crumble the chorizo over medium heat until cooked through, about 5-7 minutes.

    Remove the sausage to a paper towel lined plate or bowl.

    In the same skillet, cook and stir the peppers and onion for a couple minutes. Then add the frozen hash browns. Cook and stir until the vegetables are tender. Add the garlic, cook another minute, then remove the pan from the heat. Stir in the cooked chorizo sausage. Allow the mixture to cool slightly.

    In a separate bowl, whisk the eggs with the half and half and chili powder.

    Layer half of the chorizo mixture in the prepared baking pan. Sprinkle with half the shredded cheese (1 cup), then pour half of the egg mixture evenly over the top.

    Repeat by adding the chorizo and eggs, then add the rest of the cheese last.

    Bake, uncovered, for 35 minutes. The casserole will be cooked through and bubbly with deliciously melted cheese on top.

    Substitutions and Variations

    Feel free to use different types of sausage or meat, like breakfast sausage or bacon, for variety.

    Customize the vegetables to your liking - mushrooms, spinach, or diced tomatoes can be great additions. You could add a can of diced chilis (drained) to the egg mixture for an additional kick.

    Ingredients

    • 1 pound chorizo sausage
    • 3 cups frozen hash browns cubed
    • 1 onion diced
    • ¾ cup red pepper chopped (1 small or ½ a large pepper)
    • 2 garlic cloves minced
    • 6 eggs large
    • ¾ cup half and half cream
    • 2 teaspoons chili powder
    • 2 cups cheese shredded, Cheddar Jack or similar blend

    Instructions

    • Preheat the oven to 375F and spray an 11x7-inch baking pan with cooking spray.

    • Bake, uncovered, for 30-35 minutes. The casserole will be cooked through and bubbly. Let stand 10 minutes to set, then serve.

    Notes

    If you can't find the cubed hash browns, shredded will work, as well as mini tater tots. All make a delicious egg casserole! 😁

      My wife has been away for a couple of weeks with work and I am slowly finding my way around the kitchen! I admit it has always been her domain as she is far better at cooking than me. I will grow her anything and everything in the garden but making it into a meal is where she is amazing!
      Anyway, I am finding recipes and feeding myself and the kids, we definitely miss her flair and imagination with meals. And I think they may be sick of chicken fingers! But we are getting by.
      So I made this for breakfast on Saturday and it was a big hit with the kids. They said it was the best thing I had made them since she was away! And that I should show her how to make it. I don't think I'll go that far as she is amazing and I wouldn't want to upset her, but I will be telling her about your site as this really was delicious and easy to follow for a complete non-cook like me!
