When making fun little sweets, it's always good to plan ahead regarding how they will be served. In the case of Easter, I feel like almost anything will look right on a bed of grass. And certainly you can use the stuff from the store, but you can also make your own edible Easter grass!
What Is Edible Grass Made Of?
It's pretty simple really.
- Coconut and
- food coloring.
- Oh, and a little water.
I went with green food coloring for a classic look but I also think it would be fun to make some pink and light blue and have a mixed pastel look happening with the grass.
The coconut is the shredded kind, and either sweetened or unsweetened will work. So that choice just depends upon how you will be using the grass. In my case, it was simply to be a "bed" for some bunnies, so unsweetened was a perfectly fine choice. If you're using it to decorate a cake, sweetened might be preferred. All up to you.
How to make the edible Easter grass
- Start by mixing some food coloring with a little water. This will help dilute the color a little and help it spread out.
- Pour the shredded coconut into a mixing bowl and sprinkle the colored water over the top. Mix very well to distribute the color throughout the coconut. If you desire a deeper color, repeat with another "helping" of food coloring and water.


- Be aware that the more liquid you add, the longer it will take to dry out the "grass".
- Pour the colored coconut onto a parchment paper-lined baking sheet and spread evenly. Allow to air dry for several hours, overnight if possible.
I used this edible Easter grass for bunny cinnamon rolls. Also makes a great bed for bunny dinner rolls.

How to Make Edible Grass (Coconut Grass)
Ingredients
- 2 cups shredded coconut
- Green food coloring liquid
- 1 teaspoon water
Instructions
- In a small cup, mix a teaspoon of water with 6 to 8 drops of green food coloring.1 teaspoon water, Green food coloring
- Place the coconut in a mixing bowl and sprinkle the water/food color mix over the top. Mix well to incorporate the color into the coconut.2 cups shredded coconut
- Once the color is evenly distributed, you may choose to repeat to deepen the coconut color.
- Spread the coconut out on a parchment-lined baking sheet. Allow to air dry several hours or overnight.
