    Easy Peach Crisp

    A dear friend recently gifted me with the most wonderful surprise: fresh peaches! She ordered a giant box that came by truck from Georgia to Wisconsin, and she was generous enough to share.

    What do you make when you suddenly have a bunch of peaches getting perfectly ripe at the same time? I can tell you, you definitely want something fast and easy, and this peach crisp is both! Just slice your peaches, toss with a cinnamon-sugar mixture, and place in a pan. Top with a streusel-like topping and bake. It only needs 30 minutes in the oven, which is perfect during these warm days of summer.

    This crisp is delightful warm or even room temperature, with a scoop of vanilla ice cream to take it over the top. It's a simple, old fashioned dessert that never gets old!

    Ingredients Needed

    • Sugar
    • Cinnamon
    • Oatmeal, old fashioned oats or quick oats
    • Flour, all-purpose
    • Brown sugar
    • Butter

    How to Make this Easy Peach Crisp Recipe

    Step 1: peel and slice the peaches. If you've never done this, here is the trick: bring a large pot of water to a boil and have a large bowl of ice water standing by. Use a sharp knife to cut an X in the end of each peach, then add them to the boiling water. Leave the peaches immersed for 30 to 45 seconds, then remove and plunge them into the ice water. Leave them in the cold water for a minute or two, then remove and peel. You can grab the edge of skin at the X and pull - the skin will peel off with ease. Once peeled, simply halve each peach, remove the pit, and slice. Place the slices in a medium mixing bowl.

    Step 2: combine the sugar and cinnamon. Once mixed together, sprinkle it over the sliced peaches and toss to coat.

    Step 3: mix the topping. Add the oatmeal, brown sugar, and flour to a medium bowl and stir. Cut the butter into small cubes and add it to the flour mixture. Mix together until crumbly. A fork or pastry cutter will help break the butter into smaller pieces.

    Step 4: bake. Grease your pan first (8x8") then add the peaches and spread evenly. Layer the oatmeal mixture on top. Bake in a 350°F oven for 30 minutes.

    Serving Suggestions

    A warm peach crisp calls for a scoop of ice cream - it's the perfect warm and cold combination! Whipped cream would be yummy too, although in my farm kid days we would simply pour the cream on without whipping it first, no need to get fancy! LOL

    Storage

    I like to refrigerate any leftovers to enjoy the next day. You can eat the leftovers cold, but I like to use the microwave to re-warm it a little. Just enough to make the ice cream soft when you scoop it on top.

    Ingredients

    • 4 medium peaches peeled, pitted and sliced thin
    • 1 TB granulated sugar
    • 1 teaspoon cinnamon
    • ¾ cup oatmeal old-fashioned or quick cooking
    • ¾ cup flour
    • ¾ cup brown sugar
    • 4 TB butter

    Instructions

    • Grease an 8x8 baking pan and preheat oven to 375F.
    • In a small bowl or cup combine granulated sugar and cinnamon. In a medium bowl combine cinnamon-sugar with the sliced peaches and stir to coat evenly.

    • In a separate bowl, mix together oatmeal, flour and brown sugar. Cut the butter into small cubes and then add to the oatmeal mixture. Mix together until crumbly - a fork or pastry blender will help break the butter into even smaller pieces.
      ¾ cup oatmeal, ¾ cup flour, ¾ cup brown sugar, 4 TB butter
    • Place the peaches into the prepared pan. Layer the oatmeal mixture on top.
    • Bake, uncovered, in preheated oven for 30 minutes.
