For all of us trying to increase protein in our diets, a high protein breakfast is a must. If I get less than 20 grams to start the day, I feel like I'm way behind and will never catch up!
Which is why I was so happy to figure out how to make these cottage cheese scrambled eggs. By using cottage cheese instead of milk, the eggs get a protein boost, plus I like to add in a few veggies and cheese to make the overall nutrition and taste absolutely top notch!

Ingredients Needed for These Cottage Cheese Eggs

- Eggs
- Cottage cheese
- Optional add-ins:
- Spinach
- Tomatoes
- Cheese
How to Make Scrambled Eggs with Cottage Cheese
On the surface, scrambled eggs are made from just two ingredients: eggs and milk. You can substitute cream for the milk if you want to get fancy, or in this case, we substitute with cottage cheese. The dairy proteins help balance the richness and moisture of the eggs while keeping the texture light.
And by using cottage cheese, we provide an even bigger protein boost to our eggs than we get with milk. Win-win!
- Start by whisking together the eggs and cottage cheese. I use an immersion blender to better incorporate the cottage cheese "curds" into the egg mixture. I do not add salt or any other seasonings as I feel the cottage cheese is salty enough on its own.

2. Prepare any veggies you'd like to add in. I like to add a handful of fresh spinach and cherry or grape tomatoes, chopped up.
3. Warm up your pan on medium heat and add oil or butter. When the pan is ready, add the egg mixture. Wait about 30 seconds and then start to stir the eggs slowly.
4. For large curds of scrambled eggs, turn the heat down to medium low, this will slow down the cooking even more. Periodically sweep the pan with a spatula to gather the eggs into soft curds.
5. When the eggs are about half cooked, add in the veggies and/or cheese.

Continue to cook and stir until the eggs are cooked through to your satisfaction.
6. Turn off the heat and add a final sprinkle of shredded cheese and/or black pepper, to taste.

Scrambled Egg Variations
This is really only limited by your imagination! I have added so many different things to scrambled eggs over the years, and yet I always come back to the spinach-tomato-cheese combination.
A close second? Chopped ham - another fantastic add in to these eggs! And even more protein!
A few more ideas:
- Black beans and some salsa will give your eggs a delicious Tex Mex twist.
- Fresh herbs always brighten things up - try chives or fresh parsley.
- Other veggies? Sure! Green onions, mushrooms, and bell peppers are all great choices.
- The world of cheese is there for the choosing! I always have Cheddar-Jack on hand but I also love to add a little goat cheese or feta when I want a different flavor.

Cottage Cheese Scrambled Eggs
Ingredients
- 4 eggs large
- ½ cup cottage cheese
- Optional: tomatoes spinach, cheese
Instructions
- Add eggs and cottage cheese to a medium bowl and whisk/blend together. I use an immersion blender for this step; a standard blender works well also.4 eggs, ½ cup cottage cheese
- Chop up any veggies or other optional add-ins so they are ready to add while cooking.Optional: tomatoes
- Warm your frying pan on medium heat with oil and/or butter. When the pan is warm, add in the egg mixture.
- Wait 30 seconds and then gently sweep the spatula through the egg mixture to start gathering it into large curds. For large and fluffy eggs, turn the heat down a little and continue cooking at the lower heat.
- When the eggs are about half cooked, add in the veggies or other add-ins. Continue cooking and gently stirring until the eggs are fully cooked through.
- Remove from heat and dust with a little black pepper and shredded cheese, to taste.
