    Crock Pot Mississippi Chicken

    This is a recipe that a friend told me about, saying "you've gotta try Mississippi Chicken" - she was right! Its one of those oh-so-easy meals thanks to a trusty crockpot, a couple of seasoning packets (au jus and ranch dressing) and butter.

    The original recipe I found used boneless skinless chicken breasts. I also made this with boneless, skinless thighs and had great results so don't get too hung up on specific cuts of meat. As long as it's boneless and skinless, you will be fine.

    Crock Pot Mississippi Chicken Ingredients

    • Chicken: boneless, skinless. I've used both thighs and breasts, either works great.
    • Ranch seasoning mix - dry packet
    • Au jus gravy mix - another dry packet
    • Butter - I use unsalted because the seasoning packets add plenty of salt!
    • Pepperoncini peppers - either whole or deli sliced will work

    How to Make Mississippi Chicken

    1. Simply add the chicken to your slow cooker and sprinkle the au jus and ranch seasoning over the top.

    2. Place a stick of butter on top of the chicken and add 6 to 8 whole pepperoncini peppers. (optional: feel free to add a splash of the juice from the jar for a little extra tang)

    3. Place the cover on the crock pot and set the cycle to cook on low for 5 to 7 hours. (please note: newer slow cookers might cook a little faster)

    4. When the cook cycle is done, shred the chicken with 2 forks. Your Mississippi chicken is ready to serve!

    What to Serve with Mississippi Chicken?

    The beauty of this shredded chicken is its versatility. The seasoning adds so much flavor that you can just eat it with a fork and enjoy every bite. This would be perfect for anyone following a low carb/keto diet. Here are some more options:

    • Any time I have loose meat, I feel like there should be buns involved. Burger buns or hoagie rolls would be an excellent choice. You might want to add some more of the pepperoncini peppers when building one of these sandwiches.
    • Serve it over mashed potatoes or rice for a true comfort food meal.
    • Use it for wraps and quesadillas. It is perfect for meal prep, because you can just re-warm the portion you need, then roll it up in a tortilla for a delicious lunch or light dinner. A simple pasta salad would make a great side!

    What is Mississippi Chicken?

    Mississippi Chicken is a spin-off of the popular Mississippi Pot Roast. It uses the same signature combo: ranch seasoning, au jus mix, pepperoncini peppers, and butter. Instead of a beef roast, you use boneless and skinless chicken, usually breasts or thighs. The result is tender, flavorful shredded chicken with a buttery, savory kick.

    How long to cook Mississippi Chicken?

    For best results cook it on low for about 5-7 hours or high for 3-4 hours, depending on your slow cooker. It's done when the chicken shreds easily with a fork. There's no need to add extra liquid, the butter and pepperoncini juice provide plenty of moisture.

    Ingredients

    • 3 lb chicken boneless and skinless breasts or thighs
    • 1 packet au jus gravy mix
    • 1 packet ranch dressing mix
    • ½ cup butter one stick
    • 6 pepperoncini peppers or ¼ cup deli-sliced

    Instructions

    • Add chicken to the slow cooker.
    • Sprinkle au jus and ranch mix over the chicken.
    • Top with the whole stick of butter and the peppers.
    • Cover and cook on low for 5-7 hours.
    • When the cooking time is up, take two forks and shred the chicken. It will be very tender and pull apart easily.

    Serve with brown rice or hard rolls. This is also keto-friendly if eaten as-is.
