This is a recipe that a friend told me about, saying "you've gotta try Mississippi Chicken" - she was right! Its one of those oh-so-easy meals thanks to a trusty crockpot, a couple of seasoning packets (au jus and ranch dressing) and butter.
The original recipe I found used boneless skinless chicken breasts. I also made this with boneless, skinless thighs and had great results so don't get too hung up on specific cuts of meat. As long as it's boneless and skinless, you will be fine.

Crock Pot Mississippi Chicken Ingredients
- Chicken: boneless, skinless. I've used both thighs and breasts, either works great.
- Ranch seasoning mix - dry packet
- Au jus gravy mix - another dry packet
- Butter - I use unsalted because the seasoning packets add plenty of salt!
- Pepperoncini peppers - either whole or deli sliced will work

How to Make Mississippi Chicken
- Simply add the chicken to your slow cooker and sprinkle the au jus and ranch seasoning over the top.

2. Place a stick of butter on top of the chicken and add 6 to 8 whole pepperoncini peppers. (optional: feel free to add a splash of the juice from the jar for a little extra tang)

3. Place the cover on the crock pot and set the cycle to cook on low for 5 to 7 hours. (please note: newer slow cookers might cook a little faster)

4. When the cook cycle is done, shred the chicken with 2 forks. Your Mississippi chicken is ready to serve!
