How to Make this Arugula and Baby Spinach Salad
The greens mixes I see are usually sold in a 5 ounce size, either a bag or a clamshell. I've scaled this recipe for about half that amount. Once dressed, the greens will start to wilt so I'd rather make a fresh salad in a couple days rather than deal with leftovers.
However, if you need more salad feel free to use all the greens and just double the rest of the ingredients.
Slice the strawberries and shallot. I like to make about 6 to 8 very thin shallot slices and save some of the remaining shallot to put in the dressing.
Mix the simple dressing: balsamic vinegar and extra virgin olive oil. For a little extra flavor, scrape the remaining stub of the shallot on a Microplane to get some "minced" shallot. Only about a half a teaspoon is plenty. Add a little salt and pepper and whisk it together.

Now, assemble the salad. On top of the greens, add the feta cheese and slices of shallot and those sweet, juicy strawberries.
Don't forget the walnuts - they really provide a very satisfying crunch.
If you're making this up ahead of time, you can separately refrigerate the salad and the dressing, then add and toss just before serving.
Give the salad a quick toss to coat every leaf with the tangy balsamic dressing, and then serve.
This makes enough for 4 small or 2 larger servings of spinach and arugula salad.
Serving Suggestions
You'll want to serve this salad whenever strawberries are in season! Perfect as a side with grilled meats, or you could also make it a main dish salad by adding some grilled shrimp or chicken breast. Vegetarians will want to try tofu or edamame for that plant protein power. Delicious any way you serve it!

Spinach and Arugula Salad with Strawberries and Feta
Ingredients
- 2-3 ounces spinach and arugula mixed greens
- ¼ cup sliced strawberries fresh
- ¼ cup feta cheese crumbled
- ¼ shallot thinly sliced (about 6-8 slices, or more per preference)
- ¼ cup walnuts pieces
Dressing
- 3 tablespoons olive oil extra virgin
- 1 tablespoon balsamic vinegar
- Salt + black pepper to taste
- Optional shallot finely mince, to taste
