    Old Fashioned Pancakes - Breakfast for Dinner

    Pancakes are a great meal anytime

    When schedules are crunched and there's hardly time to think, much less plan a meal, don't forget about breakfast. For dinner, I mean. And pancakes? Well, let's face it: EVERYBODY loves pancakes.

    Oh wait - no pancake mix in the pantry? Worry not, old fashioned pancakes are super-simple to make from scratch!

    How to make old fashioned pancakes from scratch

    This recipe comes from allrecipes.com and uses staple ingredients, which I always have on hand. Flour, baking powder, milk and egg. A little butter, salt and sugar. What could be easier?

    It takes minutes to mix together and just a few more minutes for cooking time. Whisk the ingredients together and let the batter rest for 5 minutes while you warm up the griddle.

The pancake's shape and structure varies worldwide. In England, they are often unleavened and resemble a crepe.     The recipe says it serves four but let's be honest … in my house it serves 2. Your results may vary. 😀

    If your body is starting to tolerate wheat less than it used to, I found a recipe for gluten free pancakes I think you'll enjoy!

    Syrup or jam?

    But the real question is, what do you put ON your pancakes? When I was a kid, I always used strawberry jam. As I grew older, I migrated to maple syrup. The real kind, of course.

    My guy never migrated. He still prefers his pancakes with jam (raspberry, in his case.)

    Old Fashioned Pancakes from Scratch

    Ingredients

    • 1 ½ cups all-purpose flour
    • 3 ½ teaspoons baking powder
    • 1 teaspoon salt
    • 1 tablespoon white sugar
    • 3 tablespoons butter melted
    • 1 egg
    • 1 ¼ cups milk
    • Cooking spray

    Instructions

    • Sift together flour, baking powder, salt, and sugar in a large bowl.
    • Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.
    • Preheat a large skillet over medium-high heat. Spray with cooking spray. Pour batter into the hot skillet, about ¼ cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.

    Need other breakfast ideas? How about a Superfood egg? Or a truly delicious bowl of oatmeal, with berries and granola. So wonderful and satisfying!

    If you want something similar to pancakes but a little "extra", try some fruit crepes or a Dutch Baby. Or make some Bunny Butt pancakes, just for fun!

    I also have used this recipe in dairy-free versions: almond milk pancakes and oat milk pancakes. Light, fluffy and delicious!

    Breakfast for dinner has many different shapes, and can be fun for the whole family.

      Mmm, breakfast for dinner is where it's at! My mom used to make this a lot when I was younger. So good! I put syrup on my pancakes because I'm not a psychopath; not sure what this jam business is about, but I don't like it! Glad to hear you use syrup, too, Sula! 🙂
