    Chocolate raspberry bars are a delicious and easy-to-make dessert that everyone will love!

    These bars are perfect for any occasion, whether you're entertaining guests, bringing a dessert to a potluck, or simply satisfying your sweet tooth. They are a great combination of rich dark and semi-sweet chocolate and tart raspberry jam, making them a unique and flavorful treat.

    The combination of the chocolate and raspberry flavors is heavenly, and the crumbly texture of the bars adds a nice crunch. These bars are perfect for any season, and they can be served as a dessert or a snack.

    Ingredients

    The ingredient list is simple:

    • Butter
    • Flour
    • Light brown sugar
    • Semi-sweet chocolate chips
    • Bittersweet (dark) chocolate chips
    • Sweetened condensed milk
    • Walnuts (or your choice of nuts)
    • Raspberry jam (seedless)

    How to make these Chocolate Raspberry Bars

    To prep, preheat the oven to 350F and line a 13x9-inch pan with parchment paper.

    Start by making the simple shortbread-like crust. Beat the room temperature butter with a hand mixer until it is creamy. Then add flour and brown sugar. Beat together until well mixed.

    Place half of the crust mixture (about 1¾ cups) in the prepared pan. With floured fingers, press the crust to evenly cover the bottom of the pan. Reserve the remaining crust mixture.

    Bake the crust in the preheated oven for 10 to 12 minutes, until the edges are golden brown. Remove from the oven and set aside.

    Pour the sweetened condensed milk into a microwave-safe bowl. Microwave for a minute to warm up. Then add ½ each of the semi-sweet and dark chocolate chips. Stir the mixture. The chocolate chips will begin to melt.

    Microwave again, as needed, in 30 second increments, stirring in between, until the chips have completely melted into the sweetened condensed milk.

    When the chocolate mixture is completely smooth, pour it over the hot crust and spread to evenly distribute.

    Stir the chopped nuts into the reserved crumb mixture, then spoon this evenly over the chocolate filling.

    Stir the raspberry jam and then drop it by teaspoons over the crumb layer.

    Sprinkle the top with the remaining semi-sweet and dark chocolate chips.

    Return the pan to the oven and bake for 25 to 30 minutes, until the center is set. Remove from the oven and let the bars cool in the pan.

    Once cool, you can lift all the bars out of the pan using the parchment paper, set on a cutting board and cut into squares.

    Serving suggestions

    These bars are delicious on their own, but they can also be served with a dollop of whipped cream or a scoop of vanilla ice cream. They are perfect for a dessert or a sweet snack.

    Ingredients

    • 1 cup butter room temperature
    • 2 cups flour all-purpose
    • ½ cup firmly-packed light brown sugar
    • 1 cup semi-sweet chocolate chips divided
    • 1 cup dark bittersweet chocolate chips, divided
    • 1 14-ounce can sweetened condensed milk
    • ½ cup walnuts chopped
    • ⅓ cup seedless raspberry jam

    Instructions

    • Preheat oven to 350 degrees F. Butter or grease a 13- by 9-inch baking pan.
    • In a large bowl, beat butter until creamy. Beat in flour and brown sugar until well mixed. With floured fingers, press 1 ¾ cups crumb mixture onto bottom of prepared baking pan; reserve remaining mixture.     • In a small saucepan over low heat, combine ½ cup semisweet chocolate chips, ½ cup bittersweet chocolate chips, and sweetened condensed milk. Melt over low heat, stirring until smooth. Remove from heat and spread over prepared hot crust.

    • Stir chopped nuts into reserved crumb mixture; sprinkle over chocolate filling. Drop, by teaspoons, raspberry jam over the crumb mixture. Sprinkle with remaining 1 cup semisweet and bittersweet chocolate chips.

    • Return to oven and continue baking for 25 to 30 minutes or until center is set. Remove from oven and let cool in the pan on a wire cooling rack. Once cool, cut into bars.

    Notes

    You can use any nuts in place of the walnuts. Pecans or almonds would be nice.
    Similarly, feel free to try this with other flavors of jam, like strawberry or blueberry. If it's a fruit or berry that pairs well with chocolate, it will probably taste great in these bars.
