    Ingredients: Knorr rice side packet, cream of chicken soup, chicken broth, chicken breasts, broccoli, and shredded cheese.

    • Shredded cheese, Cheddar Jack

    How to Make Chicken Broccoli Casserole

    This is so easy!

    1. The only prep needed is to cut up the chicken (2 breasts). Also cut up the broccoli florets so they are all about the same size so they cook evenly.

    1. Place the chicken and broccoli in a 3-quart casserole dish. Then add the soup, broth, and half the shredded cheese. Then add the Knorr rice sides packet and mix everything together to combine.

    1. Add the rest of the shredded cheese by sprinkling evenly over the top.
    2. Cover the casserole and bake it in a preheated oven.

    If you want to make this even faster, try this: use cooked or rotisserie chicken instead of raw, and pre-cook the broccoli a little by microwaving (steaming) it for a minute. These 2 substitutions mean you should only need about 30 to 40 minutes in the oven to produce a steaming hot casserole ready to eat!

    What to Serve with Chicken Broccoli Casserole

    Casseroles can typically be considered a complete meal, but I like to serve them with a green vegetable or simple side salad to help cleanse the palate.

    A little crusty bread would be a fantastic addition to your plate as well!

    How to Store Chicken and Broccoli Casserole

    Place any leftovers in an airtight container in the fridge. The casserole will still be good for up to 4 days. When you're ready to eat it, a couple minutes in the microwave is all that's needed.

    Can you freeze chicken broccoli rice casserole?

    Yes, you can freeze leftovers of this casserole. I like to portion them into individual airtight containers first, and make sure the mixture is fully cooled down before freezing. The portions will be good for up to 3 months frozen.

    Can I use any flavor of Knorr Rice Sides for this casserole recipe?

    Certainly! I use the chicken and broccoli flavor, but Cheddar Broccoli would also work well. If you feel more adventurous, maybe the Spanish Rice flavor? Make it your own!

    Can I use frozen broccoli for this casserole?

    Yes, frozen works great! Just thaw it a little (microwave a minute) and drain any excess liquid, then add to the casserole mixture per usual.

    Chicken Rice Broccoli Casserole

    • 2 chicken breasts boneless skinless
    • 12 ounces broccoli
    • 10 ounces cream of chicken soup
    • 1½ cups chicken broth
    • 1 Knorr Rice side chicken broccoli
    • 1 cup Cheddar Jack cheese shredded, divided

    Instructions

    • Cut the chicken into bite-sized pieces. Cut the broccoli to make small florets of uniform size. Preheat the oven to 350F.
      2 chicken breasts, 12 ounces broccoli
    • Place the chicken and broccoli in a 3-quart casserole dish. Add the chicken broth and cream of chicken soup, plus the Knorr rice packet plus ½ cup of the shredded cheese. Stir to mix.
      10 ounces cream of chicken soup, 1½ cups chicken broth, 1 Knorr Rice side, 1 cup Cheddar Jack cheese
    • Sprinkle the remaining ½ cup of shredded cheese evenly over the top of the mixture.
      1 cup Cheddar Jack cheese
    • Cover the casserole dish and place in the preheated oven for 1 hour. When done, the casserole will be bubbly and hot with melted cheese.

    Notes

    If you have cooked leftover chicken or turkey, use that and pre-cook the broccoli before mixing. With these substitutions you only need 30 to 40 minutes cooking time. The youtube video shows me making this variation with leftover turkey.

      Easy Peasy! Smelled delicious when cooking.
      Comforting and satisfying when eating! Extremely adapatable to the veggies you might have on hand in your fridge and want to use up. Just cut to the appropriate size for cooking time! I also added diced onions and garlic…..mmmm! Might be an idea to spice it up with chili flakes or Jalapeño pepper 🤔🤔 if you like things spicy! Thanks for the aquick tasty dinner inspiration!

      Should I use 1 or 2 Knorr packets? I seen recipe using only one and then same recipe but using 2 !

        I think you're right, there are multiple variations of this recipe, which is a good indication that you have a lot of leeway!
        I only use one packet because I want a little more meat in proportion to the rice, but it is really your choice.
