    Quinoa with Broccoli and Parmesan

    This is one of my "go to" dishes, any time of year. It takes a mere 3 ingredients and only minutes to assemble.

    With two of those ingredients being quinoa and broccoli, this dish packs a punch of superfood action covered in one swell foop! AND it's truly delicious!

    Quinoa: a whole grain that is gluten free

    Since May is coming to a close I wanted to be sure to mention that it is Celiac Awareness month. Celiac disease is an autoimmune condition in which the ingestion of gluten leads to damage to the small intestine.

    So many people seem to be affected by this! Fortunately, there are a growing number of gluten-free foods and restaurant menus.

    I, for one, appreciate this simply because for so long, "whole grain" seemed to be synonymous with "whole wheat." The current focus on finding gluten-free alternatives increased the variety of whole grains available to us all. Which is another reason to love this dish!

    How to make Quinoa with Broccoli and Parmesan

    Most often, I make this without actually measuring the ingredients. The proportions of the three ingredients are extremely flexible, so if you have a certain amount of leftover broccoli and/or quinoa, that might be your starting point. Sometimes I might "up" the quinoa if I feel like I'm shorting myself on protein.

    In other words, for the amount of broccoli I used below I might use another half cup of quinoa, bringing the total to 1.5 cups. It is completely up to you. I also typically use fresh steamed broccoli but decided this time to use a bag of frozen broccoli for ultimate convenience.

    Start by cooking the broccoli and/or quinoa as needed. If using leftovers, warm them in the microwave. Chop the broccoli into bite-sized pieces.

    Then, simply mix the three ingredients in a bowl. The warmth from the broccoli and quinoa will be just enough to partially melt the cheese and bring the flavors together.

    Could it get any easier? For me, this is the perfect last-minute addition to a meal.

    Ingredients

    • 1 15 oz package "steam in bag" frozen broccoli florets
    • 1 cup quinoa cooked
    • ½ cup shredded parmesan cheese

    Instructions

    • Cook the broccoli according to the package directions. Allow to cool slightly and then chop the florets into smaller bite-sized pieces.
    • Cook quinoa per package instructions or warm up in microwave if using leftovers.
    • Mix all three ingredients in a bowl and serve.

      Sooo good! Made recipe as specified, except substituted, crumbled goat cheese, in place of Parmesan cheese, because that’s what I had in the house

      This is another favorite recipe of mine that I got from you! I love how easy it is to put together, as after work, there's not much time left in the day to make dinner. Plus, I've played around with different vegan cheeses and just doing that gives it a ton of variety. YUM!!!
