Why I Love this Recipe
My first matcha baking experiment was matcha muffins. They turned out so great that thoughts turned to other ways to use this lovely green powder. Of course, matcha brownies seemed like they’d be worth trying.
My time-honored brownie recipe is Toll House brownies, a recipe that used to be printed on the chocolate chip bag. That recipe was my starting point.
Now, when you revise a brownie recipe and take away all the real chocolate, there are bound to be some errors, you know? I usually expect to make 3 batches of something like that before I’ve got it right.
But this time, everything clicked right away. I substituted white chocolate for the chocolate chips, used both white and brown sugar instead of all white, but most of the other ingredients lined up.
The result? A deliciously rich brownie, soft and chewy, with those crinkly edges I find essential in a good brownie. They are sweet and buttery and every velvety bite is a delight.
Ingredients Needed
Most ingredients are what you would expect of a brownie: flour, sugar (brown and white), baking soda, salt, butter, vanilla, and eggs.
Instead of chocolate or cocoa powder, we use white chocolate and matcha powder.

How to Make These Matcha Brownies
To prep, preheat the oven to 325F and use parchment paper to line an 8-inch square pan.
Mix the dry ingredients (flour, baking soda, salt, and matcha powder) in a bowl and set aside. I use a whisk to evenly distribute the ingredients.
Now, heat the butter in a small saucepan and add the sugars and a little water. Bring this just to a boil, then remove from heat. Immediately add the chopped white chocolate and vanilla. Stir until the white chocolate has completely melted and the mixture is smooth.
Transfer the cooked mixture to a large bowl. Add the eggs, one at a time, beating well after each addition. Once the eggs are fully incorporated, start to add the flour mixture. I like to add about a third at a time, stirring well to mix it in before adding more.
Transfer the batter to the prepared pan.
Bake in the preheated oven for 30-35 minutes, until done. The brownies might appear slightly under done in the center but that is ok, they will continue to bake a little while cooling. Overbaking could result in dry brownies, and no one wants that!
Allow the brownies to cool in the pan and then cut and enjoy!
Variations
When I was making these, I wondered whether the "grassy" taste of the green tea would need extra sweetener to compensate. So I prepared some cream cheese frosting and tried some brownies with and without frosting. To be perfectly honest, I felt that the frosting added nothing to the taste and only made me feel guilty about the added fat and sugar. So, for me, frosting is completely uncalled for.
I used a white chocolate baking bar as that is what I had on hand, but if you want to use white chocolate chips those should work as well. I would use ¾ cup of the chips.
AND, if you use chips and still have the other half of the bag, you could add these to the batter just before baking. This will create an additional burst of white chocolate taste within the brownie.

For years we have heard of the benefits of green tea. It is thought to help in weight loss, cancer prevention and brain function, to name a few.
Matcha powder is a more concentrated form of green tea. Rather than steeping the leaves in water, matcha is a powder made by grinding up the leaf. A special type of tea leaves are used to make matcha, and the grinding of the leaf means that the antioxidants are present in much higher quantities than in regular green tea.
Basically, more of the good stuff!
Well, I’d love to be able to call brownies health food, but I think the butter and sugar might make that a hard case to make. Let’s just say that if you’re going to have a brownie, this one does have some powerful antioxidants to help your overall health.
So we'll call it a little bit healthier than a traditional brownie, right?

Matcha Brownies with White Chocolate
Ingredients
- ¾ cup flour all-purpose
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 2 tablespoons matcha powder
- ⅓ cup butter
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 tablespoons water
- 4 ounces white chocolate baking bar chopped
- 1 teaspoon vanilla
- 2 eggs
Instructions
- Preheat oven to 325F. Line a 8x8-inch baking pan with parchment paper.

- Gradually blend in the flour mixture by adding about a third at a time, mixing in well, then adding another third until all of the flour mixture has been completely incorporated.
- Transfer batter into the prepared baking pan.
- Bake the brownies in the preheated oven for 30-35 minutes. Allow to cool completely in the pan before cutting.
