    Rice Krispies Chocolate Chip Cookies

    What, to you, makes a great cookie? For me it's a combination of textures and flavors: chewy and crispy, with sweet and unexpected ingredients.

    These oatmeal and Rice Krispie cookies are a great example. Take a delicious oatmeal cookie base and add in some Rice Krispie cereal for an unexpected sweet and crispy crunch. And then I add in chocolate chips. Because chocolate makes everything better!

    The result is a cookie with a delightful harmony of flavor in every bite!

    Why You'll Love these Rice Krispie Cookies!

    What's not to love? Oatmeal - good. Rice Krispies - good. Chocolate chips - good.

    It checks all the boxes.

    And really, with both oatmeal and Rice Krispies cereal in the cookies, I think you would be justified in having these for breakfast. Don't you agree? 😃

    Ingredients Needed

    ingredients: oats, sugars, baking soda, butter, vanilla, egg, flour, cereal, chocolate chips.

    How to Make Rice Krispie Cookies

    1. Like most cookies, these start by creaming together the butter with the sugars. I like to use an electric hand mixer for this, to get them evenly combined. Then mix in the eggs and vanilla.
    2. In a separate bowl, combine the flour, baking soda and oats, then add to the mixing bowl and stir to combine.
    3. Now add the cereal and chocolate chips to the bowl and stir with a spoon to evenly distribute throughout the dough.
    4. Use a cookie scoop to measure the dough and place on a parchment lined baking sheet, about 2 inches apart. With your fingers, gently flatten the balls of dough slightly. They will spread a little when baking, so don't flatten completely.

    1. Bake the cookies for 10 minutes in a 350F oven. Allow the cookies to cool 1 or 2 minutes on the baking sheet before removing to a wire rack to cool completely.

    Chocolate Chip Rice Krispie Cookies

    A little bit of Rice Krispies crunch in every bite of oatmeal cookie - a delicious combination!

    Ingredients

    • ½ cup butter room temperature (1 stick)
    • ½ cup sugar granulated
    • ½ cup brown sugar
    • 1 egg room temperature
    • 1 teaspoon vanilla
    • 1 cup flour all-purpose
    • 1 cup oats old fashioned or quick cooking
    • 1 cup Rice Krispies cereal
    • ½ teaspoon baking soda
    • 1 cup semi-sweet chocolate chips mini

    Instructions

    • Preheat oven to 350F and line baking sheet(s) with parchment paper.
    • Cream together the butter and sugars, using a hand mixer if available.
      ½ cup butter, ½ cup sugar, ½ cup brown sugar
    • Add egg and vanilla, mix well.

    • In a separate bowl, mix the flour, baking soda, and oats. Then add to the mixing bowl and stir well to combine.

    • Add the cereal and chocolate chips and stir until evenly distributed.
      1 cup Rice Krispies cereal, 1 cup semi-sweet chocolate chips
    • Use a cookie scoop to measure the batter and place about 2 inches apart on the prepared baking sheet. Use your hands to gently flatten each portion of dough into a round shape.
    • Bake for 10 minutes in the preheated oven. Allow cookies to cool 1 to 2 minutes on the baking sheet before removing to a wire rack to cool completely.

      These are great cookies. I had this recipe from a friend and the final step was this: take them out at 9 minutes and sprinkle lightly with sea salt. Then return to oven for one minute or so. Mine usually need more than 10 minutes.

      I needed something to use up some lingering rice krispies in my pantry and this recipe came out great. I added in chopped pecans, toffee bits and half the amount of chocolate chips. I also browned my butter because I never remember to pull it out to soften before baking. Went scant on the white sugar. They’re a trust the process kind of cookie and came out delicious. Thank you!

      I was in a hurry so mixed the flour, oats, Rice Krispies and chocolate chips together. Then added to butter/ sugar mixture. I also only used 1/4 cup of brown sugar as don’t like sweet. Sooo good!

      These are the best cookies. I have made them several times since last Thanksgiving. Everybody loves them. I also made an Oatmeal, Raisin, Coconut, walnut version. I omitted the chocolate chips and replaced them with the ingredients above. I have gotten rave reviews from everyone especially my husband’s work. I made about 8 batches for Holiday parties. The recipe is very easy also!

      These are soooo good, and so simple! I made the recipe once as written and then made a couple little tweaks. First off, definitely use rolled oats if you have 'em. They give the dough a certain airiness that keeps the rice krispies CRISP. Because I like a little more "chew" to my cookies, I doubled the brown sugar and omitted the white sugar. I also added 1/2 a tsp of salt to balance out the sweetness. Definitely add the oats, chocolate chips, and finally the rice krispies one at a time and in that order. These kept chewy for days! So delicious.
