    Lemonade Pie with Condensed Milk

    Lemonade is for summer

    Is there anything more refreshing on a hot summer day than lemonade? It's tart, sweet, thirst-quenching (and I swear it cools body temperature) all at once. I love it!

    That made this recipe an easy choice: a no-bake pie with the flavors of lemonade. This is another super-easy pie that requires very few ingredients, and the result looks like you labored from dusk til dawn. Note: While Lemonade Pie is not a labor-intensive recipe, planning ahead is essential since preparation for this cool confection includes four hours of defrost time for the Cool Whip (I ALWAYS forget this step) and four more hours of freezer time for the assembled pie.

    Frozen Lemonade Pie ingredients

    The ingredient list, like the preparation, is simple: frozen lemonade concentrate, sweetened condensed milk, a little lemon zest and Cool Whip.

    A quick note about the ingredients: this fits a 9-inch pie. If buying a pre-made crust (like I did) it is the larger (9 oz.) 10 inch size, described as "2 extra servings." Also, the amount of frozen lemonade needed is 6 ounces. Lemonade concentrate used to be sold in this size, but all I ever see these days is the 12-ounce size. Solution? Either double everything and make two pies, or save half the can for something else, like, lemonade maybe? 😀

    I used "light" Cool Whip for this and loved it. Although I've yet to try it, I think a truly low-fat version could be achieved using fat-free Cool Whip and fat free sweetened condensed milk. I commonly see the fat-free Cool Whip but fat-free sweetened condensed milk is not always as easy for me to find.

    How to Make Lemonade Pie with Condensed Milk

    This is the easiest pie ever! Simply stir the ingredients and pour into a prepared graham cracker crust.

    The minimum amount of lemon zest is a teaspoon, but for even more lemon flavor I like to zest the whole lemon.

    Pour the filling into the prepared crust. When I make my own graham cracker crust, I put it in a 9-inch pie plate. When I buy a prepared crust from the store, I buy the 9 OUNCE size, which is labeled as a 10 inch pie.

    One of the benefits of the store-bought version is that I save the plastic cover, invert it and re-seal the edges so I have a nice cover on my pie while I put it back in the freezer.

    Freeze for 4 hours and it's good to go!

    What I also like is that this lemonade pie never freezes solid. It stays creamy and easy to cut and serve no matter how long it's left in the freezer. Or maybe I should say, up to 3 days because that's the longest this has ever lasted in my house!

    Lemonade Icebox Pie variations

    Here are some fun variation ideas for your pie:

    • Use pink lemonade concentrate, it usually will have a slightly sweeter flavor and of course a pretty pink color.
    • Add strawberries or raspberries into the filling for a burst of berry goodness.
    • Use limeade concentrate and lime zest in place of the lemonade and lemon zest for a frozen limeade pie.
    • Mix in a block of softened cream cheese to make a richer filling.

    How to store Lemonade Pie

    Store your lemonade pie in the freezer and cut a few slices whenever you need a sweet summer treat! If kept in an airtight container, it should be good for up to 2 months. But I highly doubt it will last that long!

    Ingredients

    • 6 oz frozen lemonade concentrate thawed, ½ a normal can
    • 8 oz frozen whipped topping Cool Whip, thawed
    • 14 oz sweetened condensed milk
    • 1 teaspoon lemon zest or just the whole lemon
    • 1 prepared graham cracker crust 9 ounce, 2 extra serving size (10 inch)

    Instructions

    • In a large bowl, mix the lemonade, sweetened condensed milk and lemon zest. Stir in whipped topping.
      6 oz frozen lemonade concentrate, 8 oz frozen whipped topping, 14 oz sweetened condensed milk, 1 teaspoon lemon zest
    • Pour filling into the prepared crust.
      1 prepared graham cracker crust
    • Freeze for at least 4 hours until firm.

    Notes

    Lemonade concentrate used to be sold in 6 ounce cans, but they are now all 12 ounces. Be sure to use only half the can, unless you are making 2 pies.

    Lemonade Pie is delicious! You can also get that great lemonade taste making a Kool-Aid Pie. Some other frozen pie ideas are Creamsicle Pie, Frozen Tropical Lime Pie, and Frozen S'mores Pie. I can't pick a favorite!

      I used a 10 inch pre-made pie crust and still had a bowl full left over. It's great though. I just put the left over filling in 3 separate bowls and put toasted almonds on top. Great

      It’s amazing but I’m clearly doing something wrong. The minute I take it out it’s runny. I let it freeze for 3 days!

        Ok so something must be off with your ingredients. First, verify you are using Sweetened Condensed Milk - NOT evaporated milk. Sometimes people get those mixed up.
        Second, check the quantities of the other ingredients. 8 ounces is the standard container size for Cool Whip, but the lemonade concentrate is more likely the problem. Most of the containers sold these days are 12 ounces, so if you're making one pie you only use half the container.
