How to Make Rolo Chocolate Chip Cookies
Using premade cookie dough makes this a snap. Especially the kind in a flat package, because that dough is already pre-scored into 24 equal sized portions!
You can break off the dough along the lines, but I have found it easier to just cut using the lines as a guide. That way, you’re guaranteed a clean break.
Place each piece of dough in a “pocket” of the mini muffin pan. It is not necessary to pre-grease the pan; however you might want to consider it to ensure a clean release of the finished cookie. A liner might work too, but I haven't tried that yet.
Now, place an unwrapped Rolo candy into each of the pieces of chocolate chip cookie dough. If you’ll notice, I did not bother to shape the dough into a ball or anything. Which makes this the fastest cookie ever!
Place the muffin pan in the preheated oven and bake for 12 to 14 minutes. The cookie dough should be set and very lightly brown on the edges.
Allow the cookies to cool completely before removing from the pan. I recommend at least 30 minutes of cooling in the pan.
This is the hard part, because the aroma is probably beckoning you. . . but trying to remove the cookie bites right away will inevitably result in the cookie breaking apart. Which is not all bad if you just want to have a quick taste LOL.
Remove the Rolo stuffed cookies by loosening along the edges with a butter knife. They should pop right out of the pan.

Ingredients
- 16.5 ounce chocolate chip cookie dough 24 count
- 24 Rolo candies unwrapped
Instructions
- Preheat your oven to 350F.
- Cut the cookie dough into equal sized pieces using the lines in the dough as guides. Place one portion of dough into each pocket of a mini muffin pan. It is not necessary to shape the dough into a ball or anything, the square will fill the round pocket as it bakes.16.5 ounce chocolate chip cookie dough
- Place one piece of unwrapped Rolo candy into each portion of dough.24 Rolo candies
- Bake the cookies for 12 to 14 minutes. The cookies will be set and the edges very lightly golden brown.
- Cool the cookies in the pan for at least 30 minutes. The longer they cool, the easier they will be to remove.
- Use a butter knife to slide along the edge of each cooled cookie, and they will pop right out of the pan.
