    Why You’ll Love this Recipe

These little cookies are so delicious. Perfect little bites of sweet chocolate and caramel. It’s a flavor combination like none other!

Even better, using store bought cookie dough means you only need 2 ingredients! One package of the dough makes 24 cookies, which is exactly how many spots are in a mini muffin pan. Coincidence? I think not!

    Ingredients Needed

Ingredients: refrigerated cookie dough and candies

How to Make Rolo Chocolate Chip Cookies

Using premade cookie dough makes this a snap. Especially the kind in a flat package, because that dough is already pre-scored into 24 equal sized portions!

You can break off the dough along the lines, but I have found it easier to just cut using the lines as a guide. That way, you’re guaranteed a clean break.

Placing the squares of dough into the mini muffin pan.

Place each piece of dough in a “pocket” of the mini muffin pan. It is not necessary to pre-grease the pan; however you might want to consider it to ensure a clean release of the finished cookie. A liner might work too, but I haven't tried that yet.

Now, place an unwrapped Rolo candy into each of the pieces of chocolate chip cookie dough. If you’ll notice, I did not bother to shape the dough into a ball or anything. Which makes this the fastest cookie ever!

A piece of Rolo candy pressed into the cookie dough.

Place the muffin pan in the preheated oven and bake for 12 to 14 minutes. The cookie dough should be set and very lightly brown on the edges.

Baked cookies right out of the oven in the muffin pan.

Allow the cookies to cool completely before removing from the pan. I recommend at least 30 minutes of cooling in the pan.

This is the hard part, because the aroma is probably beckoning you. . . but trying to remove the cookie bites right away will inevitably result in the cookie breaking apart. Which is not all bad if you just want to have a quick taste LOL.

Remove the Rolo stuffed cookies by loosening along the edges with a butter knife. They should pop right out of the pan.

    Serving Suggestions

These little cookie cups are a perfect afternoon snack with a glass of milk or cup of tea. They are also a great addition to a Christmas cookie assortment or in a cookie gift basket.

Try one with a scoop of ice cream for an extra-special treat. 😁

    Substitutions and Variations

Got other Halloween candy? Try using a chocolate kiss in place of the Rolo candy, or even a mini peanut butter cup. It’d be a little tough to beat the combination in a brownie peanut butter cup bite, but worth a try!

    Storage

To keep these cookies fresh, store them in an airtight container for up to a week at room temperature. For longer term storage, place the container in the freezer.

    More Easy Treats to Enjoy

I love figuring out ways to re-purpose Halloween candy. That's how I came up with my no bake Snickers Pie - an easy and delicious use for Snickers candy bars!
