    Its the balance of salt and sweet in this salad that really wins the day. If you've ever put a little salt on your watermelon, you know. Salty feta and sweet watermelon, what an amazing pair!

    Crunchy onion and cucumber provide crunchy textures and more savory taste, and the honey lime dressing marries all the flavors together. Simply delicious!

    Ingredients Needed

    How to Make this Watermelon Feta Salad with Honey Lime Dressing

    What you want to do first is make the delicious honey lime dressing. Make it the day before if that works better for your schedule. It's the kind of dressing you'll be glad to have on hand, especially for summer salads. 😁

    Now, the salad.

    Cut up the watermelon into small cubes. You'll need 3 to 4 cups, which is about ¼ of a medium sized watermelon.

    Thinly slice the cucumber and onion and add to the bowl. Then add the crumbled feta cheese and chopped mint.

    Add about ¼ cup honey lime dressing to the watermelon feta salad and toss gently to combine.

    Serving Suggestions

    This watermelon salad will be perfect with any grilled food. BBQ chicken, grilled pork tenderloin, or even a stuffed burger would all be delicious with a side of this salad!

    You'll want to serve it whenever watermelon is at its peak season!

    Storage

    Got leftovers? They won't keep long, but if you refrigerate you can still enjoy this salad the next day. The watermelon starts releasing water as soon as you mix it with anything salty (i.e. feta cheese) so trying to keep it any longer than a day will result in a soupy mess.

    Ingredients

    • ¼ watermelon enough for 3 to 4 cups of cubes
    • 1 mini cucumber
    • ¼ red onion sliced thin
    • ¼ cup feta cheese crumbled
    • 1 tablespoon fresh mint chopped
    • ¼ cup honey lime dressing

    Instructions

    • Cup up watermelon into bite sized cubes. Place in a medium to large bowl.
    • Thinly slice the red onion and cucumber and add to the bowl.
    • Add the feta cheese and chopped mint.
    • Drizzle the salad with the honey lime dressing and then toss gently to mix.
    • Salad is ready to serve right away.

    Ingredients

    • ¼ cup Dijon mustard
    • ¼ cup honey
    • 2 tablespoons sugar
    • 2 tablespoons grapeseed oil or sesame oil
    • 2 tablespoons apple cider vinegar
    • 2 tablespoons lime juice fresh squeezed

    Instructions

    • Add all ingredients to a small blender.
      ¼ cup Dijon mustard, ¼ cup honey, 2 tablespoons sugar, 2 tablespoons grapeseed oil, 2 tablespoons apple cider vinegar, 2 tablespoons lime juice
    • Blend on high speed 30 to 60 seconds, until uniformly smooth.
    • Place in a jar with lid and refrigerate until ready to use.

      I fell in love with watermelon and feta when I was in Greece. But adding cucumbers to it made it feel like a whole salad! Haha my kids were in heaven.
