I wanted to bring to your attention an important holiday coming up. One that is screaming for this Frozen Lime Pie. I'm hoping the day is marked on everyone's calendar. Every year on the third Sunday in July our nation should set aside time to observe National Ice Cream Day. Should be a national holiday, right?
Clearly, an ice cream pie is in order. And now that I think about it, lets celebrate the third Sunday of EVERY month. Who's with me???

Ingredients You'll Need for this Lime Ice Cream Pie

Crust:
- Golden Oreos
- Coconut
- Butter
Filling:
- Lime sherbet
- Vanilla ice cream
- Whipped topping (Cool whip)
- Lime zest (optional)
How to make Frozen Tropical Lime Pie
Make the crust
This recipe is adapted from an old one and features both lime sherbet and vanilla ice cream. The crust was the greatest challenge for me as I needed something with a sweet yet slightly tropical vibe. I came up with a great combination by combining Golden Oreos with a sprinkling of coconut. It took a couple tries, but I think I got it.
I prefer my coconut chopped fine, so I take already shredded coconut and chop it even smaller. Without this step, the coconut texture seemed too obvious in some bites. I want smooth texture with just a hint of coconut.

Here is some coconut - chopped on the left compared to the shredded "just out of the bag" on the right.
Just chop up the cookies in a food processor, to make fine crumbs. Then add the coconut and mix. Transfer this to a bowl and add melted butter. Mix until the crumbs are evenly moistened.

Transfer to a 9-inch pie plate and press firmly to form the crust - on the bottom and sides of the plate. Place the crust in the freezer while you mix up the filling.
Make the filling
This filling is made from 3 main ingredients: lime sherbet, vanilla ice cream, and Cool Whip. The Cool whip adds a little extra creaminess to the filling which makes it smooth and less icy than ice cream pies can sometimes get.
You will of course, need to let the ice cream and sherbet soften a little in order to measure and mix it together, but usually about 10 minutes at room temperature works for that.

An optional ingredient is a little lime zest. It can help to provide a little extra zing to the taste. I've tried both with zest and without. I think it is delicious both ways, but ultimately I prefer the extra Zing! Can't go wrong with the taste of fresh lime!
Once the filling is mixed together, pour it into the prepared crust. Then place the pie in the freezer for at least 2 hours to re-freeze.
Once fully frozen, you might need to remove the pie from the freezer and let it sit for 5-10 minutes at room temperature to make slicing easier.

Frozen Tropical Lime Pie
Ingredients
Crust
- 24 Golden Oreo cookies ⅔ of a 14.3 oz package
- ¼ c butter melted
- 3 TB sweetened coconut chopped fine
Filling
- 3 cups lime sherbet softened
- 2 cups vanilla ice cream softened
- 1 cup whipped topping Cool Whip or similar
- 1 teaspoon lime zest optional
Instructions
- To make the crust, place Oreos in a food processor and process to fine crumbs.24 Golden Oreo cookies
- Add the chopped coconut and mix together.3 TB sweetened coconut
- Transfer the Oreo mixture to a bowl and add melted butter. Stir to evenly moisten the crumbs.¼ c butter
- Reserve one tablespoon of crumbs for topping.
- In a 9-inch pan, press remaining crumbs in the bottom and up the sides.
- Place in freezer while assembling the filling.
- In a large bowl, mix softened sherbet, softened ice cream, and whipped topping until smooth. Add grated lime peel if using.3 cups lime sherbet, 2 cups vanilla ice cream, 1 cup whipped topping, 1 teaspoon lime zest
- Pour filling into the chilled crust.
- Top with reserved crumbs.
- Freeze for at least 2 hours until firm.
- To serve, let frozen pie stand at room temperature for about 10 minutes before cutting.
