    Chili Lime Shrimp

    In the mood for some seafood? Me too! Shrimp is one of my favorites: it’s healthy, tasty and so fast and easy to cook! I was looking for a little Tex-Mex flavor so decided on chili lime shrimp, and with that I built a delicious protein bowl.

    Ingredients for chili lime shrimp

    There are many ways to make chili-lime flavors but I really like the simple approach, so instead of coming up with a combination of chili powder and a bunch of other stuff, I rely on the Trader Joe’s Chili Lime seasoning to do most of the heavy lifting, flavor-wise. The result is a very short ingredient list:

    • Shrimp
    • Chili-Lime seasoning (Trader Joe’s)
    • Lime wedges
    • Cilantro

    How to make the chili lime shrimp

    To start, peel your shrimp. Place in a bowl and add the chili-lime seasoning. Start with about 2 teaspoons and add more if you think it’s needed. I like a full Tablespoon for a pound of shrimp, but if you want less bold/more subtle, stick with 2 teaspoons.

    Squeeze a lime wedge into the bowl and mix together.

    Add the shrimp to a hot skillet and start to cook, stirring occasionally. Squeeze another wedge of lime over the shrimp while cooking.

    Yes, I added lime to the bowl plus there is lime in the seasoning. But I REALLY like the taste of lime, so I do add some more. You can skip this second squeeze if you’re not sure you want that much lime.

    When the shrimp is done, it will be opaque and pink. This should only take about 4-5 minutes. Turn off the heat and sprinkle with chopped cilantro.

    Done in minutes!

    How to make these shrimp protein bowls

    The thing about protein bowls is, it’s all up to you! What do you like in your bowl? I like some greens and a grain. Sometimes I use massaged kale and quinoa. Other times, a simple green salad and brown rice.

    And any time I have something that even hints at Tex-Mex flavors, I MUST have avocado! A little more cilantro and another lime wedge because yes, I love it that much.

    But to really make the cilantro and lime taste buds sing, I made a batch of my cilantro lime sauce and used it as a dressing. It was excellent, and really pulled the whole thing together!

    You can serve this on a plate or in a bowl, and you will enjoy every bite!

    Ingredients

    • 1 pound shrimp peeled and deveined
    • 1 lime cut in wedges
    • 2-3 teaspoons chili lime seasoning Trader Joe’s
    • Chopped cilantro to taste
    • Oil – for cooking I use canola oil

    Instructions

    • Place shrimp in a bowl and add seasoning and a squeeze of lime. Stir to coat the shrimp evenly with the seasoning.
    • Heat a little oil in a skillet in medium-high and add the shrimp. Squeeze another wedge of lime into the skillet.
    • Cook, the shrimp, stirring, until done. Shrimp will be opaque and pink. Turn off the heat and sprinkle with chopped cilantro.
