If you have even considered a low carb or keto diet, you have probably heard of a “chaffle.” Basically, this is batter made primarily of cheese and egg and cooked up using a waffle iron.
I first tried keto waffles a couple years ago, made from either mozzarella or cheddar cheese. I really couldn’t get myself to love them. So, I just kind of tabled the whole idea.
Then I found a recipe for cream cheese pancakes which sounded good. I started there, and for some reason really wanted to make waffles instead of pancakes. I kept tweaking the recipe to get the type of batter I wanted, and really felt I had it down.
Then, I made a mistake. And in the end, I enjoyed my “mistake” version more than any other! So now this is my go-to recipe for a breakfast chaffle. It creates light, fluffy keto waffles that make a really delicious and satisfying breakfast!
Why I Love These Breakfast Chaffles
First, let’s start with easy. Only 4 ingredients needed to make the batter. Gotta love that!
Second, they are fast. I use one of those Dash mini waffle irons and it works great! Each breakfast chaffle cooks in about one and a half minutes.
Third, leftovers. One batch of this batter makes about 6 keto waffles. One or two is plenty for me. I cook up the whole batch at one time, then I freeze the waffles and keep them in a zip lock bag. Whenever I want a chaffle for breakfast, I take one out of the freezer, and use the toaster to warm it up. They get nice crispy edges that way!
And last but FAR from least, they are truly delicious. The “mistake” I made and subsequently fell in love with is this: fewer eggs. Most chaffle recipes have a higher proportion of eggs to cheese. It can sometimes make the texture a little eggy and sponge like. By reducing the eggs, the sweet flavor and tender texture of the cream cheese really shines!
What is a Chaffle?
A chaffle is a “cheese waffle”, basically a waffle made without flour to make it low carb and keto friendly. The first versions of this used only egg and cheese, either mozzarella or Cheddar. My version uses some almond flour and cream cheese to provide a delicious taste and tender texture.

How to make a Chaffle
- Start by mixing the batter. Make sure the cream cheese is softened, so it incorporates well into the batter. If needed, you can microwave on low power for 30-60 seconds to get it nice and soft.
- Then, mix in the eggs, sweetener, and almond flour. I use my immersion blender for this, to get a nice smooth batter.
- Preheat your waffle iron and begin cooking the chaffles when ready. For the dash mini waffle iron, about 3 Tablespoons of batter is just enough for each one. Close the lid and let the waffle iron do the cooking. Mine has a light which goes off to indicate that the cooking time is done.
- Remove the chaffle and repeat with the rest of the batter.
- These delicious keto waffles are ready to eat right away, or they can be frozen for later use.

How do you like your waffles? These days it’s not too hard to find a keto equivalent.
Lakanto has a maple syrup substitute that is keto friendly. If you are craving the maple syrup taste, that will work.

But I prefer something fruity. I make a keto berry sauce and use that with some fresh berries. A little dollop of keto whipped cream or cheesecake fluff and you have a plate filled with deliciousness!
And, for a quick “chocolate” fix I like to warm up a chaffle and add some “Nutella” – i.e. a sugar-free chocolate-hazelnut spread. Divine!
How to Store Keto Waffles
For short term storage, first cool the chaffles to room temperature. Then place in an airtight container, with pieces of parchment paper in between the keto waffles to prevent sticking. Store in the refrigerator for up to 5 days.
Can you Freeze Chaffles?
Freezing is actually my favorite way to store my chaffles! First let them cool to room temperature. Lay flat on a plate, place the plate in the freezer for about 30 minutes. Once waffles are partially frozen, you can put them all in a plastic bag and return to the freezer. Frozen chaffles will be good for 2-3 months.
For either frozen or refrigerated chaffles, use your toaster to reheat and get yummy crispy edges.
Chaffles Recipe FAQs
Not at all! The recipe did start out that way, and it included cinnamon in the batter. One of my changes was to eliminate cinnamon to achieve a more neutral taste. So even though they are primarily for breakfast, I also sometimes grab one to spread with tuna salad for a quick lunch. Still delicious!
You can try to whisk by hand but that’s going to be tough! As mentioned above, I use an immersion blender. A regular blender or hand mixer will work too. I like to mix the eggs and cheese first, then add the dry ingredients and mix again.
This is where the toaster is your friend. Take a cooked chaffle and pop it in! As mentioned, I freeze my extra chaffles and toast whenever I want one or two. I use the normal toaster settings for toasting bread, which works great for a frozen chaffle. A lower setting is needed for an unfrozen chaffle, but obviously you can choose your preferred level of “crisp.”

Keto Chaffle Recipe
Ingredients
- 4 ounces cream cheese softened
- 2 eggs
- 1 Tablespoon powdered sweetener I use Swerve
- ½ cup almond flour
Instructions
