How to Make Cookies from Brownie Mix
- Of course, you need brownie mix. But it needs a little extra "structure", otherwise the batter will just spread out on your pan and make……brownies. LOL
- I've tried various approaches to this. Most people seem to add either an extra egg or flour. Adding egg helps a little but the cookies still spread out too much for me. Using flour works so much better!

- Empty the brownie mix into a large bowl and add flour. Whisk these together to break up any lumps and evenly distribute the flour throughout.
- Now add the eggs, melted butter, and vanilla extract. Mix well to make a thick batter.

- With a small cookie scoop, form balls with the dough and roll each in powdered sugar to coat all around. Set the coated balls on a parchment lined baking sheet, about 2 inches apart to allow room for the cookies to spread.

- Bake the cookies for 10 minutes at 375F. Remove the pan from the oven and allow the cookies to cool on the pan for 10 more minutes before removing to a wire rack to cool completely.

I haven't tried this yet, but I plan to, with my toll house brownie recipe. I would expect it to work just fine, as long as you add the extra flour to thicken the dough.
Your dough might need a little extra flour. Add one to three tablespoons of flour to help give the dough more structure.
I used "chocolate fudge" brownie mix which was plenty rich for me! But if you want more, add in about a half cup of chocolate chips to the dough. This will be especially amazing if you eat the cookies warm, when the chips are still melty....yum!

Brownie Mix Cookie Recipe
Ingredients
- 1 box 18 to 18.4 ounce brownie mix
- ¼ cup flour
- 2 eggs large
- ¼ cup butter melted
- 1 teaspoon vanilla extract
- ¾ cup powdered sugar
Instructions

I loved this recipe! I used a chocolate fudge mix with semisweet chocolate chips and 63% chocolate chunks. I also wanted a larger gooey cookie so I sized my cookies to be about the size of a golf ball and baked for 12-13 minutes. They turned out perfectly gooey!

Oh my, these were oh so good! It’s like a fluffy, chewy brownie cookie! I made them for gifts and now I’m going to go back to the store so I can make some for myself! I was a little worried about the reviews that said theirs were flat so I just refrigerated my dough for about 20 mins and put the cold balls into the oven. They were perfection. Tried this recipe today to take to work on Monday. Quick easy recipe. I was a little scared when 11 minutes was up and they really hadn't spread at all. Didn't want them to burn so I took them out and lightly pressed on the top and bingo perfect crinkle whew. And I had to sample to see if they were good and oh my gosh the guys are going to love them!!!
Next time I'll add the little bit of milk to the dough. But even without doing so they were goey good because I used giradelli double fudge brownie mix and it actually has chocolate chips in the mix.
