    Air fryer egg bites are a fantastic addition to your breakfast repertoire. Not only are they incredibly easy to make, they also offer a nutritious and delightful way to start your day.

    Growing up on a farm, I learned to appreciate the comforting, hearty flavors of traditional recipes-especially a good, protein-packed breakfast. But my modern lifestyle demands an easier way to make these meals!

    Enter these egg bites! Packed with cheesy egg tastes and customized with veggies or meat, once I started making egg bites in the air fryer I felt like I had married old fashioned breakfast goodness with the ultimate convenience of the air fryer!

    Why you'll love this Recipe For Egg Bites

    Air fryer egg bites are easy to love! They are super easy to make and provide a balanced and nutritious start to your day. Packed with protein, healthy fats, and essential nutrients, these bites will keep you energized and satisfied until your next meal.

    Plus, they are small and portable, ideal for grab and go on busy mornings. (so basically, every day!) Its faster and easier than using the Starbucks drive-through!

    Ingredients Needed

    Ingredients: eggs, milk, spinach, green onion, cheese, bacon bits.

    🔪Equipment Needed

    First, let's talk about the equipment. You'll need an air fryer, of course. I have the Ninja Digital Air Fry Pro (Countertop), and that is what was used to develop and test this recipe.

    You also need something to cook the egg bites in. When you make them in a standard oven, most people use a muffin pan. But for an air fryer, you probably need something a little smaller. 😁

    I have silicone muffin cups that I love for this. They come in a 4-pack, and they are easy to arrange to fit whatever model air fryer you have.

    I have tested these poachers both greased and ungreased. The egg bites release just as easily without greasing the mold, which is a big plus for me. (one less thing!)

    How to Make This Recipe for Egg Bites

    1. First whisk together the eggs and milk. Add salt and pepper to taste.
    2. Stir in the chopped spinach, bacon bits, chopped green onion(scallions), and shredded cheese.

    1. Divide the egg mixture equally into the silicone molds.
    2. I like to place the molds directly on the air fryer tray before filling. (lined with foil for easy spill clean up)

    1. This next step is technically optional, but I like to add a sprinkle of cheese on top. Because there's no such thing as too much cheese!

    1. Once filled, I just pop the tray in the air fryer and start the cycle: Air Fry - 375F - 15 minutes.

    Recipe Tips For Success

    Some air fryers tell you to preheat, others do not. Mine does not require this step, and it only takes under 2 minutes to come up to temperature once you start the cooking cycle.

    However, egg bites have a very short cooking cycle, so preheating the air fryer can make a difference. I'm providing timing for each option to help with this.

    If I want to shave a few minutes off that cooking time, I preheat the air fryer. For mine, I set a 10 minute cycle at 375 and start it while I'm mixing everything together. When I'm ready to cook, I just pause the air fryer, place the tray in the oven, and then re-set the timer for 10-12 minutes. (10 minutes is enough if the bites will sit for a couple minutes before eating. If I need to serve right away, I cook for 12 minutes).

    Every air fryer is different, so you'll want to figure out what works best with yours. Run the cycle for the shorter time, then use a fork to "peek" inside an egg bite to determine "doneness". The beauty of this is how easy it is to just run the air fryer for another 2 minutes or so if the egg bites seem under cooked.

    Air Fryer Egg Bites Variations

    Once you've got the timing down, there are countless ways to customize these egg bites to your taste or mood. Here are a few mix-ins to try:

    Cheese: I typically use Cheddar-Jack or a Mexican blend, because I always have one of those in stock. But there are a lot of cheeses to choose from. Try a pizza blend or maybe some feta cheese for a fun variation!

    Meat: Bacon bits are so convenient, but you could cook your own bacon and chop it up for these bites. Or substitute with ham or some cooked breakfast sausage. A great use for leftovers! Or just eliminate the meat for a vegetarian version.

    Veggies: The spinach adds a lot of nutrition, but you could substitute with other leafy greens if you like. Massaged kale is a great choice, and chopped frozen spinach (thawed) would also work.

    Don't forget other vegetables! Broccoli is a great addition, just be sure to chop into small pieces to ensure even cooking.

    And what's really delicious is a little potato in the mix. Just thaw out some tater tots, chop them up and put a few pieces in the bottom of each mold before adding the egg mixture. This takes away the low carb quality but it is so worth it!

    How to Store Leftover Egg Bites

    These egg bites can be prepared in advance and stored in an airtight container in the refrigerator for up to 3-4 days. They are perfect for meal prep!

    To reheat, you can microwave (about a minute is usually enough), or pop them back into the air fryer for a few minutes until warmed through.

    Sometimes I place the silicone molds with egg bites into the airtight container in the fridge. Then microwave the egg bite right in the mold. Super convenient!

    Can I freeze air fryer egg bites?

    Absolutely! Allow them to cool completely, then place them in a freezer-safe container or bag. To reheat, thaw in the refrigerator overnight and warm them in the air fryer or microwave.

    Can I use cottage cheese in these egg bites?

    For sure! I'm a big fan of cottage cheese scrambled eggs, and you can use cottage cheese here as well. Just substitute cottage cheese for the milk, and use a blender (or immersion blender) make a smooth egg mix. The cottage cheese becomes your secret ingredient to add even more protein to this bite-sized breakfast!

    Can I use egg whites only?

    You can use all egg whites or a combination of whole eggs and egg whites, depending on your dietary preferences.

    💭More Breakfast Ideas to Start Your Day

    While you've got that air fryer fired up, consider making some frozen sausage patties in the air fryer. A great addition to an egg bite breakfast!

    If you love to prep some grab-and-go breakfasts for your busy work week, Add some chia seed pudding and overnight oats into the mix.

    My personal favorite is cookie butter overnight oats, or peanut butter and jelly oats to appeal to the kid in all of us! You can even layer oats with frozen fruit for a super convenient option!

    Chia seed pudding is incredibly versatile, you can add pretty much any fruit! Try some dragon fruit chia pudding for a bright start to the day! Mango pudding is another popular choice, and when berries are in season, try some blackberry chia pudding.

    Ingredients

    • 4 eggs large
    • ¼ cup milk
    • ¼ teaspoon salt or to taste
    • ⅛ teaspoon black pepper or to taste
    • 1 cup baby spinach (a large handful) chopped
    • 1 green onion chopped
    • 2 tablespoons bacon bits
    • ⅓ cup cheese, shredded plus more for topping

    Instructions

    • Whisk the eggs and milk in a mixing bowl. Season with salt and pepper, to taste.

    • Stir in the chopped spinach, bacon bits, chopped green onion, and shredded cheese.

      These are great for the kids!!
      I preheat the air fryer when I get up in the morning and mix up the eggs into mugs.
      Then each of my children just adds what they want and pops it in the airfryer as they are getting ready for school.
      They can all have a warm breakfast when they need it and I am not shouting after 5 different kids to make sure they eat something.

      This is a go-to recipe! I adapt it "kitchen sink" style and dump in all sorts of left over cooked meat, bell peppers, mushrooms, etc. Whatever is in the fridge!
